I used jumbo Chardonay raisins, too. so beautiful and tasty/ yum! Que rico esso, no? lol...oh. and i used light brn sugar.

I sometimes add Spanish peanuts, 1 tsp of ground cloves and 1 ounce of whole anise (I roll it with a rolling pin to release the flavor) to change it up a bit. Some add coconuts, pecans, walnuts etc. It's fun to experiment.

I tried this recipe to day and it was successful. I made the batter yesterday and today we assembled and steamed them. The masa seems a little mushy when steamed but 97% easily pulled away from the hoja and didn't change when we added cooking time. When cooled they were soft but delicious. I added 4 plumped raisens in a few of the tamales and I liked those the most. I made a half recipe and ended up with about 4 dozen tamales. Thank you for the recipe.

Hello Karri Ashley If you like coconut go for it. I’m pretty sure it will be good. Just a pineapple tamale doesn’t call for coconut, but remember you can always make it your own... thank you for watching & take care.

Do NOT put pennies in the bottom of the cardenas brand pots the rattling of the pennies will put a hole in the bottom of the pan. I think our pot only lasted a few months at best hence the cheap price of the pot!!!!
