I just LOVE tamales! Yum! I have a question. You said to steam for 30 minutes. I've seen instructions saying all different amounts of time, all the way up to about 2 1/2 hours. What would be the reason for such a variance in steaming time? Thanks in advance, and thanks for all of your videos. Merry Christmas

Thank you for this recipe!! I would like to make these today, but I dont have Anaheim peppers, I do have poblano and jalapeno on hand.... could I substitute those instead?
@JustMe-oi9ms3 жыл бұрын
I always use Poblanos and Oaxaca cheese. I even add a bit of drained creamed corn into the masa. It gives it a more sweet corny taste and moistens the masa in the process, so I add less fluids like water or broth.

So quick two questions. I made these today. I had two issues. The first one was after mixing and spooning, the masa didn’t stick to the husk, I had to make several attempts to make a straight or semi straight bed of masa. What did I do wrong lol? 2nd was after 30 minutes each tamale was still very soggy. I worry that if I cook it longer, they will dry out and that is one thing I consistently have an issue with is the dryness from over cooking
