I made these this past weekend with a friend and they are delicious! A couple tips: 1) Make the tamales as big as you can, before I realized this the first half of my dough made 25 when the whole recipe is supposed to make 33 or 34! 2) You can use a tortilla press to make pressing the masa easier during the filling stage, and finally 3) CHECK YOUR WATER LEVEL FREQUENTLY WHILE STEAMING! Unfortunately I burned the bottom of BOTH pots I tried (I can clean them thanks to Barkeeper's Friend which works well for stainless steel), but honestly set a recurring timer. Water can evaporate much quicker than we realize! The masa is super yummy and I will be saving this recipe. I also can't believe this video only has 25k views! Thanks so much ~ P.S. Seriously, set a recurring timer to check water levels

In your recipe you mentioned Maseca instant corn masa and King Arthur instant corn masa. Which one did you use in your video? One or the other or both together? If I want to cook these ahead of time to freeze them , do I freeze them before I cook them or after I cook them? Do you suggest to de thaw on the counter or do you de thaw them in the refrigerator and for how long? If they are not done within a hour of cooking how many more minutes do you let them continue cooking? Sorry for so many questions but it is a lot of work and I want them to come out as beautiful as yours! 😁👍🏼 Thank you for sharing!! I can hardly wait to make them…💕
