Thank you so much! I've recently made my own Tempeh, from soy and chickpea, from following your brilliant videos, both came out amazing. I had to make an incubator from an old cool box, computer fan, and heat pad with a thermostat, to create the right conditions. The UK is pretty cold this time of year. I fried some up this evening with Sichuan pepper and Korean soup soy sauce, to go with homemade Bibimbap, tasted amazing. Your videos are awesome 😃 Thank you! 😊😃

interesting you chose to use a fan, I was wondering if I should use one too, do you find it indispensable ? is it related to the humidity levels in your climate or just that the box becomes too doomed without a fan ? This bring back memories of helping my late grandma making & preparing Tempeh for sale in our hometown... we use banana leaf and special woodland shrub leaf that bring the very delicate aroma to the Tempeh.

Thank again to you. I have just finished my second batch of tempeh. This time I use lentils instead. I soaked the beans for 24 hours and boiled for about 25 minutes. The rest is your instructions.I even reused the zip lock bag. Thank you 🙏 very much.

Many years ago I had an Indonesian room mate, whenever she came back from Indonesia she would bring back what resembled a large ball of steamed dough which she would cut into strips and add to stir fries.. Couldn't it work in some better quality material, like glass Tupperware with a lid with holes ? Wonder if I can use balsamic vinegar, or other kinds of vinegar ? Use banana leaves? For what? I tried to make tempeh last year, total failure, cos its too cold. I might use a low heating pad just to make sure it’s going to work. Place banana leaves than the bag of tempe? Is that what you mean? It’s quite humid atm, so m gonna try again. Hi! Thanks for the nice video. I was wondering about the temperature. We keep our house at 72 degrees. Not sure where should I place the tempeh while fermenting and for how many hrs. Can't wait to try this!

Hi Carla. You can just leave the tempeh on your kitchen counter on a wire rack for air flow. My kitchen is a lot warmer than that and fully ferments between 36 - 48 hrs. It may take longer in your kitchen, but at 72 degrees it should ferment just fine. You'll know when the tempeh is done when the the white mold (mycelium) doesn't look fuzzy anymore, and has a solid appearance similar to nougat. If you're using a Ziplock bag, the plastic will also adhere to the tempeh like it's been vacuum packed. Hope this helps and good luck!

Hi thanks for your video - very helpful 🙏 as we live in a cooler climate I had to place the bags in the food dehydrator without the fan to keep them warm - after 24 hours the edges were white and solid so I left it on for another 12 hours but now there is less white and less solid ? Do you think it was too warm for too long perhaps ? The bags are wet inside but it almost looks like I’m back to where I started ? Any tips ?

Hello! Glad you found this video helpful, and it inspired you to try making your own tempeh ☺️ It sounds possible that the tempeh was too warm for too long, and it killed the mould. Perhaps next time, after the initial 24 hours, you can try taking it out of the dehydrator and placing it somewhere cooler to continue fermenting. You'll know the tempeh is done when the white mould (mycelium) doesn't look fuzzy anymore and has a solid appearance similar to nougat. It will also feel warm. If you're using a Ziplock bag, the plastic will also adhere to the tempeh like it's been vacuum packed. Hope this helps, and all the best on your next try!
