Brilliant. As an extra, my wife is gluten intolerant so the homemade teriyaki sauce means I can use gluten free soy whereas a gluten free store bought one was not possible. It opened our meals up a lot.

That teriyaki sauce tastes so good. Finding the sake was the hardest part to find, had to head to a large liquor store and buy a 16.00$USD bottle of drinking sake. That sauce was well worth it 😋

That was fricken fantastic! Hubs and our 4 children loved it. Sauce is 5 star. I didn't have Sake so iI used Chardonnay with a splash of rice wine vinegar. Ohhh em geee! Really let that sauce thicken, give it time. So worth it. Never buying bottled again.

I have been using your teriyaki recipe since the week you uploaded, and *wow* it goes well in so many dishes. I've even used it as a light dressing for salad. Simple and delicious, just as food should be ... for a working bloke. ;) Edit: btw, I enjoy the bg music.

I’m a commercial fisher person. Marinate a few hours. Rinse it. BBQ. Then proceed to the sauce as he says. The marinade will firm the fish for the bbq.

I love the idea of this dish. I have one question though. Why brush the salmon with corn flour when you cook them separately, but combine at the end? Does this allow the corn flour to combine with the sauce when combine while cooling? I've always thought that cooking the corn flour with sauce is how you make that thick sought after consistency.

Adam, When you sear the salmon, do you typically add a light seasoning (salt & pepper), or does the teriyaki sauce enough?

can you recommend a Japanese naturally brewed soy sauce brand that's readily available in Australia?

There is a readily available brand that is in all the Asian grocery stores that just has "Premium Soy Sauce" in English on the label (red, white, black and a bit of gold) and 特級しょうゆ written in Japanese. It comes in 1.8L bottles and it's what I often buy, but even the ordinary Kikkoman soy sauce is good and naturally brewed.

When I made this and reduced the sauce in the pan it was so extremely salty that I almost couldn’t eat it. Please explain? I used light soy sauce but it is not naturally brewed. Can I make this with low sodium soy sauce? Or is naturally brewed less salty?

I think it helps to protect the fish and prevent the fish to lose too many juice. And, sometimes it will form a thin but crisp layer outside, depending on the heat level

He said cooking sake (which you can find in any asian grocery store) is perfectly fine, it would actually be a waste to use high quality sake for cooking.

You should try this sauce I made it's delicious: 1 tbsp Premium soy sauce - lee kum kee 1 tbsp Sweet soy sauce - Kecap manis 1 tbsp Oyster sauce 1 tbsp sesame oil 1 tbsp honey 1 tsp Fresh grated garlic 1 tsp Grated ginger 1 tsp tamarind paste 1 tsp fish sauce 1 tsp finely Chopped chili 1 tsp ground sichuan pepper 1 tsp 5 spice powder Pinch of brown sugar Pinch of salt Squeeze of lemon or lime juice....(or you can use either vinegar/saki/mirin/etc) 1/2 cup Liquid chicken broth You can serve this sauce with vegetables, pork or rice it's so delicious it's the best sauce i've ever had
