Not with this way of doing it. You could do several offset strokes within an Appearance, and the text would be editable. But honestly it doesn't look as nice.

I'm a beginner (less than beginner) with Ai and I want to get really good at it. Aww thank you so much!! I think the thing with Illustrator is just practice, practice, practice. Use it every day, trying a new tutorial or repeating one you learned before. Try to make your own art too! It's the best way to get better!
