Mom and i save a bag of snow in the freezer. Sometimes we get very nice visitors who have never seen or touched it. The reactions are always cute 😋

We so rarely get snow here on the far west coast of Canada. But when we do we have to move fast to go sledding. Then come home to Mexican style hot chocolate. Abuelita's hot chocolate has much more flavour than carnation hot coco and it reminds me so much of coming home from sledding as a kid and asking my mom to make it "her way". Usually the snow is a brown mess by the end of the day but this year it stuck around for almost a week! It's gone now... but the rest of the province is till getting loads of snow. You can buy Mexican hot chocolate at Mexican import stores. It comes in a stack of pucks. One puck mixed with a litre of hot milk then whipped into a froth. Sprinkle cinnamon and a little cayan powder, if u like. Your videos are such a relief. I'm not sure what it is exactly that is so captivating. But even my 5 and 2 year old suns come running over to watch when they here your voice. Thank you for the oasis of calm in an otherwise hectic time in our lives.

This winter season will soon be fleeting so I will also try to cherish it as much as possible. It's amazing how certain scenery, food, smells can bring us back to those warm memories. So glad I found your channel, I rarely subscribe to any food channel but I saw one video and I couldn’t resist but to hit those buttons lol. The calm and serene sceneries with your soothing voice and delicious meals you’re an inspiration to Thai cooking! I live in a similar demographic setting as yours so needless to say I’ll cooking your dishes more often now as I’m a visual learner as well. Although I dislike the cold weather, but there's something about snow that makes the atmosphere looks like a magical wonderland as long as I don't have to shovel it. Love the recipe, so appropriate for this weather. 😋

My take on his recipe: THAI STEAK SALAD | NAM TOK NEUA INGREDIENTS • Beef Steak - 1lb / 454 g (Your favorite cut of steak. I used Sirloin Steak Tips, what I had available.) • Oyster Sauce - 1 tbsp • Golden Mountain Seasoning Soy Sauce - 1 tbsp • Sugar - 1/2 tbsp • Vegetable Oil - 1 tbsp • Water - 4 tbsp (refer to video for technique) Nam Tok Dressing (Should be sour & savory) • Fish Sauce - 2 tbsp • Lime Juice - 3 tbsp (taste and adjust depending on the sourness of your limes) • Roasted Chili Flakes - 1 tbsp • Toasted Rice Powder - 4 tbsp (instructions in my Laab video) • Juices from the steak - (refer to video for technique) Fresh Aromatics • Scallion - 4 stalks • Cilantro - 8 sprigs • Shallots - 3 to 4 small bulbs • Mint Leaves - 1 handful Directions Season with oyster sauce, Soy sauce and sugar. Marinate for at least 3 hours in the fridge Wash aromatics. Chop all. Medium high heat, add oil, add steaks and char. Cook steaks to medium rare to rare On low heat in wok, add water and beef. Cook, add fish sauce and lime juice. Off heat add the aromatics to the beef and add chilli powder and toasted rice powder Serve with sticky rice!

Hi Hannah! Yes you can use any cut. Just as long as it isn't overcooked because it will become too chewy.
