Thought this might be helpful for people who just need the recipe. I think I copied it right. America’s Test Kitchen Egg Nog Recipe 4 cups Whole Milk 1/4 tsp salt 8 high quality eggs (6 full eggs, 2 egg yolks) 1/2 cup + 2 Tbsp white sugar 1/2 cup brandy, bourbon, or dark rum (optional) 1 Tbsp Vanilla Extract 1/2 tsp nutmeg 1/2 cup Heavy Whipping Cream (1/4 cup if not adding alcohol) Bring milk to simmer over medium-high heat. Whisk eggs and sugar together until incorporated. Whisk simmering milk into egg mixture to temper. Return mix to saucepan. Cook on medium-low for 2-5 minutes, until temperature reaches 160-165 degrees. Take off heat, strain into serving bowl. Add alcohol (optional), vanilla extract, and nutmeg, mix to combine. Cover and chill at least three hours. When ready to serve, whisk heavy whipping cream to soft peaks. Add whipped cream to custard mixture and whisk to combine. Serve topped with freshly grated nutmeg.

I just made one with tiramisu flavors. I added some espresso grounds to the milk while simmering it, mixed in some mascarpone cheese in place of the whipped cream, and I found a cold-brew coffee liqeur to use as the alcohol. It's in the fridge now cooling down for tomorrow. I plan to serve it in a mug with a dusting of cocoa powder on top and a lady finger stuck into it like a cinnamon stick would be. I'll let you know how it turns out.

It's two days before Christmas and I went to four different markets. All were out of eggnog! I found this video and made some myself. I used 3 cups of milk and 1 cup of heavy cream, omitted the booze till later but otherwise followed this recipe. Perfectly delicious. My guests can add liquor to their taste.

A real simple Kid friendly Eggnog (from a kids cookbook from the 60’s) 1 egg, 2 tablespoons sugar, pinch of salt. Mix then add 1 cup milk, 1/4 teaspoon vanilla. Mix and season to taste with nutmeg. Makes one serving. I usually make a triple batch in a blender. You can also use egg substitute if you are afraid of drinking raw egg. Growing up in the 60’s I would drink this eggnog year round. Enjoy

Great version for a cooked egg nog. I've always combined the eggs, milk and sugar together first then slowly heated it up -- tempering is not needed. It tastes no different compared to the tempered version and it's easier to do.

Tempering has nothing to do with flavor. It's done to avoid turning your egg mixture into scrambled eggs by adding the hot milk all at once. Might still not be absolutely necessary but it's the safer way to go. ;-)

My great grand mother made hers by separating the egg yokes from the whites. Beat the yokes, then beat the whites stiff with a fork on a frozen plate. Blended slowly together. It was amazing. I dont remember the recipe bc I was it was 64yrs ago. 🤣🙂

Just split your whites in the beginning. Machine beat until soft peaks, aff 1/3 cup of sugar. Continue to beat then add to the milk mix. Before chilling. Then whisk when u get out of the fridge again. Add in 1/4 - 1/3 cup of baileys. Serve and top with whipped cream@@danjv

This is basically the same ingredients (minus the liquor) as making a flan which leads me to thinking, if you bake it in the oven at 40-50 mins, it will turn out to be a flan. Conversely, the precooked flan taste like an eggnog. Something to think about.

I like a thicker custard and twice the liquor (half c. brandy and half c. rum or bourbon works). But however you do it, it is SO much better than the melted ice cream in the store.

My mom made the best eggnog when we were kids: whole milk, eggs, sugar. That’s it. She used an old fashioned egg beater. No cooking either. We drank it once it was beaten. She made it year round. Back when times were simpler. Delicious and great memories. 🥚🥚

What's the reason for scalding the milk if we then need to heat the custard to the right temp, curiously? I did learn a lesson to not use the same pan that I scalded the milk as the stuff that stuck to the bottom of the pan ended up in the custard - but was luckily skimmed out when I strained it. Delicious eggnog - best recipe that I found after trying about four others. I liked the cream way better than meringue as it mixed in better. :)

Since clicking on the recipe takes you to basically a paywall, here it is: Bring to simmer 4 cups whole milk and a pinch of salt In a bowl wisk 6 eggs plus two yolks and ½ cup + 2 tbsp sugar Temper the egg mixture with the hot milk and gently cook until temperature reaches 160-165. Have an old family recipe that is absolutely incredible with bourbon white rum. People make requests for quart every year. This sound great but with stick with the old recipe which does allow the alcohol to do it’s thing on the raw eggs

I think Promised Land ‘Holiday Nog’ tastes much better than the Egg Nog flavor. It’s not easy to find here though. You have to almost know when the one store that sells it stocks it because it goes quickly.
