I’m only 20 years old and I didn’t really grow up with my mom around she passed away when I was younger but I do remember when she would cook in the kitchen 😍😍but when she passed away my grandma stepped in place and raised me so when I watch your channel and the way you teach reminds me of them so much and I feel at home so the fact I’m a soon to be momma I can make these dishes for my baby girl and show her how to cook thank you for that ❤️❤️❤️❤️ love your channel 🙏🏻

If no one told U today, I Love U. I missing cooking for the family they are all grown up, live far away and you bring me lots of joy. My mother was from Sonora, Mexico and her cooking was a bit different than yours but you teach me new things. I watch you all the time. I live on a mountain with giant trees, shopping day takes us 6-8 hours because the big stores are far away. I am 67 and please keep cooking. You are Great, Thank you for Sharing.

So, I followed this recipe and I have to say: probably the best enchiladas I have ever eaten! Being a single guy though, it made a lot! I portioned the left overs into single serving containers and popped them in the freezer. Guess what? Just as delicious reheated! A tip if you own an air fryer toss them inside there and leave them for about 10-15 mins or until they are roasted. They come out really good less mess and easier to peel when tossed in a bag.

Another option to char the poblano chiles (if you don't have a gas stove like me) is to put them on a cookie sheet lined with foil and stick it under the broiler in the oven. Again, like she said, you have to keep a close eye on them and flip them halfway.

MGarcia0604 you can also use Anaheim peppers,and jalapeños if your a fan of really spicy souce, I also add heavy cream or evaporated milk,no tomatillos!!! And it comes out so delicious to thicken it up yiu brown flor and oil till it gets kinda light brown then add a little of the chicken broth to delude it and whalaaaa !!

Made this the other day for a gettogether and it was a HIT. Just wanted to confirm for everyone. It was a little time consuming but worth it. I loved the home made sauce. I made a few casserole dishes, a couple with the homemade sauce and one with cammed Las Palmas Green Sauce. Some preferred one sauce over the other but overall everyone happily ate up both kinds.

I have had these my whole life and they are so delicious! My parents and now myself and my children make the green and the red enchiladas regularly, and definitely at Christmas!! It reminded me of a funny story from my Dad, when you also mentioned the red enchiladas. As we were growing up we would ask "What's for supper?" My Dad on days with enchiladas, would tell us, "Enchiladas!". Well since they fixed both red and Green we would ask, "What color?" Dad would always tell us either, "Purple with pink polka dots!", or "Pink with purple polka dots!": To which we would reply "DaaAaad!" He would say, "what?" and so we would ask again, to which he would give us the same combination of colors, and so we would say, MooOoom, what color?" and she would tell us which color we were actually having! It of course was always done playfully! I did the same with my children especially because my Dad passed when I was 16 and I wanted them to know many great parts of his character, only I got my kids with a step further...lol! When they would ask what's for supper, I would tell them "food".. They would ask "What king?", and I would reply, :The kind you put in your mouth chew up and swallow!" That always got a MooOoom out of them as well!! LMBO!!! All of my love, the Love, Blessings, and Grace of our LORD GOD ALMIGHTY, unto you and yours today, tomorrow and for always!!!

OH WOW! I made your version for the family w leftover roast pork, but a low carb version for myself w zucchini, oh my!! delicious. The nutmeg is a must, it adds a really special flavor to this. you and your husband are so loving and sweet to each other! what a blessing!! you are a fabulous cook and you remind me soo much of my childhood friend Janet. she taught me how to cook Mexican food when we were teenagers.Everyday after school we would go to her house and we'd make us a snack. something simple like chilequilles or rice or refried beans but they were always the best!!! and best memories!! ty for bringing those memories back for me!😁 I've always made enchiladas but only with can sauce cuz I didn't know how to make it like real authentic style. As a Mexican from “Old Mexico” these look like Swiss enchiladas pretty much, lol good and yes a good substitute for queso Oaxaca (quesillo) is Mozzarella. It’s interesting you put the queso fresco ok top. My home enchiladas would have queso fresco, chopped onion and cilantro inside, with red chili sauce, I also love enchiladas con mole. Enchiladas are the ultimate dinner from a cenaduria. Saludos desde México

Good job girl! Love you trying to teach intuitive cooking. That is exactly how I cook, and is the sign of a good cook, but it does make it hard to pass on recipes. I will be tying this with my Hatch Green Chile from here in New Mexico. Don't think I would be allowed to serve anything else. Can't wait for more recipes!

One of my New Year resolution is to cook more and I’m so happy I found your page. I made this today for my family and the red one the other night, and everyone LOVED it! I usually make the brown. Or red sauce with Hamburger. But I'm definitely going to be making these. ! Thank you for your show..... my mother in law taught me how to cook. That where I learned to make mine. Not from a box or can. It's best when it's home made.

I got all my "stuff" together last evening and I made the green chile enchiladas and my wife said" I love this and I don't like peppers, It was so good and the sauce came out great. Not gonna lie, I had some for breakfast this morning and nuked it in the microwave for 90 sec and it was really good. thank you so much for making it so much fun to cook "mexican", ps used some flour tortillas that I made the day before,,,
