Barraquito or zaperoco is a sweet coffee drink very popular in the Canary Islands (Spain). It is frequently served in layers, thanks to the different densities of its ingredients, which are, from bottom to top, condensed milk, liqueur, espresso coffee and milk. foamed It is served in a medium or tall glass, and decorated with cinnamon powder and lemon or lime peel. In the northern part of the island of Tenerife, the area between Buenavista to the west and Puerto de la Cruz to the east, is also known as "zaperoco". Origin
There are various theories, although the most accepted dates back to the middle of the last century in Santa Cruz. According to the Historical-Etymological Dictionary of Canarian Speech by Marcial Morera, the name comes from a regular customer of the Imperial Bar, Don Sebastián Rubio, nicknamed "Barraquito" or "Barraco", who always ordered a cut with condensed milk in a long glass, a glass of Licor 43, lemon peel and cinnamon. This bar is still active and is located near Plaza de la Paz. According to other sources, this occurred at the Paragüitas Bar, also in Santa Cruz.
