I find cooking bacon in the oven WAY better than a pan, it turns out more evenly cooked, doesn't curl and you don't have to constantly watch it and flip it.

I think that's just your personal preference there. Some people prefer their bacon well done and very crispy, others prefer it where it's more resembling ham, but a bit more flavoursome. It's still perfectly safe to eat, and I'd presume when ordering you can ask for the bacon to be cooked a bit more.
