This is a very popular dish in Trinidad and Tobago and is the signature dish in Tobago. Cooked in various herbs and spices, this dish can be eaten with rice as well but the ultimate combo is the dumplings. You can have this with cassava dumpling, corn meal dumpling or any other choice. green seasoning
3 heaps (eating spoon) of curry powder
1 tsp roasted geera (cumin)
1 tsp tumeric powder
1 1/2 cup coconut milk
ochro (optional)
Salt to taste
1 tbsp oil
maithee (fenugreek)
Parsley flakes (optional)
Dumpling
4 cups all purpose flour
salt to taste
1 tbsp softened butter
