Hi, great recipe! I use a tortilla press instead of rolling out the dough. Any suggestions for doing a larger batch of mini pies faster? What about using a hand cranked pasta press or a dough sheeter? Please help! Thank you!

Hi Alex! I wish I had a great tip for you, but I use a mini rolling pin for hand pies (however, I can't wait to try your tortilla press trick!). Since this dough is much more delicate than pasta dough, I don't recommend using a pasta roller.

Could I use regular table salt and monk fruit that I have on hand and is it possible to use canned cherry or apple or blueberry pie filling?

You can absolutely use regular table salt! You can use monk fruit sweetener as well, although the crust won't brown as nicely (it won't be quite as balanced in flavor). This pie crust works great with canned pie filling!

If using this for quiche, and not wanting the sugar in it... will it still work? Or will the pie crust not brown?

Hi there! I still add the sugar when I make quiches and savory tarts because I prefer the flavor (it's not overly sweet), but you can absolutely omit the sugar if you prefer!

I made your recipe and I was SO happy I had an etible gf df pie crust. It didn't have much flavor and I think I should have baked it longer, but I was still quite happy. Question...I make chocolate pudding pie for the holidays. I always bake the crust first but have never added beans, just prick the dough then pop it in the oven. I baked it for 11 minutes because historically if a gf crust browns, it's a bit burnt, but think this crust could have baked longer. Thoughts?

Hi there! I’m so happy to hear you liked the crust! Using the dried beans or pie weights will prevent the crust from bubbling up in the oven as it cooks. I do recommend using them, as it helps the crust stay in the corners, but if you don’t use them, press down gently on the crust when it comes out of the oven, deflating any bubbles. The crust is fabulous with chocolate pies, and I hope you enjoy!!

Thank you! Cup 4 Cup definitely works best (I’ve tested most GF flour blends), but Bob’s Red Mill 1-to-1 GF flour works- however, the dough is more crumbly (you’ll have to do some patching). Let me know if you give it a try!

I always use gfjules flour and it worked great in this recipe...except I should have baked it longer. Baker error. 🙃

Hello! What if I don't have a food processor? Can I make it with a standing mixer?

If you don't have a food processor you can absolutely make the dough by hand! I often make it this way. Combine the flour mixture in a large bowl, then scatter the butter cubes over the flour. Using your hands or a pastry cutter, break up the butter into the flour until you have pea sized pieces. From there, drizzle in the apple cider vinegar and water and toss with a fork until the dough comes together. Good luck, and keep me posted!!

I've found the Cup 4 Cup is the easiest to work with, but you can use the King Arthur Measure-for-Measure instead. It will be a bit harder to roll, but just patch it up as needed. Let me know if you give it a try!

Yes! While I haven’t tested this recipe with lard, it should certainly work. Just note that you might need to add a bit more water if the dough seems too dry. 😊 Keep me posted!

I thought that you couldn’t ‘over mix’ gluten free batters/dough. Isn’t it the gluten we are trying to not develop which isn’t on the gluten free flour anyway??

Hi there! The problem with over-mixing this pie dough doesn’t have to do with the gluten but with how the butter incorporates into the dough. For a flaky pastry, you want to have pieces of butter of different sizes - the butter will then create steam when it hits the heat of the oven creating a light, flaky texture. If the dough is over-worked you won’t have the pockets of butter and you’ll end up with a denser, tougher crust. I hope this helps!

Yo. Have you tried einkorn flour? It has gluten, but it's ancient and unmolested by science, and gluten-sensitive people seem to be able to eat it.

Ugh...went too far and the crust is rock hard. 😭. Looks like chocolate pudding in a bowl instead of in a pie crust. We'll still enjoy that. 😓
