It was so good and still tasted fried. Pork has natural oils so it taste great in the air fryer.

Lady, did you even wash your meat? The color of your epis looks questionable! Boullion cubes is a turn off and is not a traditional part or used in Haitian cooking (that stuff will kill you!). That's too much carrots and the texture is wrong it should be shredded. You could have used the grater to shred the cabbage you know (work smartly not harder). You have too much carrots for the pickliz and not enough cabbage. The plantain looks uncooked and not crispy as if only went through one frying process instead of double and the rice looks too greasy.

Great question! It assist with tenderizing the meat and penetrating the flavors. Naturally when cooking meat its good to add an acidic ingredient.
