This recipe came up at the perfect time! I was craving macaroni & cheese today so I picked up a a box of Kraft deluxe cheddar Mac n cheese. I remixed your recipe a bit by putting red peppers and Colby jack cheese(non-shredded)😂 & almond milk. It’s very DELICIOUS!!!!!! Happy Friday!!!

I made this tonight for my family and it's a great twist to mac n cheese. It had a little kick to it but not spicy. It was good! For those who say that it is watery once it settles and cools it thickens. So good! Thank you Claudia for another amazing recipe!

I am always looking for different side dishes to serve with Mexican dishes. I could definitely see having this with crunchy chicken taco. I love baked Mac and chz. My Gma made it baked with sharp cheddar but it was always dry. My mom makes it on the stove with Velveta. I made a comment one day I needed Gpa's version mixed with moms. My Gma, on mom's side told me to make with a Velveeta base and throw in the sharp cheddar and blend in an egg or two. OMG it is so good. Last time I made it I threw in a little smoked paprika and it adds so much flavor. I can only imagine the poblanos would make it even better.
