How to Make the Best Milk Tea in the World

Ever walk into a bubble tea shop and think "maybe I could make this"? Well, you can! Making the perfect milk tea is simply about balancing the flavors of tea with milk and adjusting the sweetness just how you like it. Try it out and let me know what you think!
Basic Milk Tea (makes ~2 cups, or 2 servings)
3 bags, 7.5g, or 3 tsp of your favorite tea
22g or 1.5 tbsp of a sweetener of your choice
400g or 1 3/4 cups of any milk you'd like
Hot water
Amounts listed above are meant to be a starting point. Adjust to taste!
1. In a pot, add tea and hot water. Bring to a boil, then turn heat to low and simmer with the lid on for 10min (you don’t want the water to evaporate) (POINT: You need to steep as much flavor into the tea as possible because the milk really dilutes the flavor. When i first tried making milk tea, I only simmered the tea for like 3min and you couldn't taste the tea after adding in the milk.)
2. Squeeze out as much liquid as you can from the tea bags/leaves and remove from the pot.
3. Add sweetener to the hot tea and stir to dissolve. (POINT: Adding the milk will considerably dilute the sweetness, so consider adding enough to account for that)
4. Add milk and you're done! To serve it cold without diluting it with ice, chill in the fridge or freezer if you want to cool it fast and are willing to keep an eye on it. To serve it hot, you can pour the sweetener and milk straight into the saucepan and heat to your desired temp.
5. Write down what ingredients you used and how much. Adjust amounts and ingredients to your taste and you'll have found your new favorite milk tea!
Earl Grey Honey Milk Tea (2 servings)
Earl grey tea, floral honey, whole lactose free milk. Same portions as above.
Lychee Milk Tea (2 servings)
Lychee black tea, agave, 2% lactose free milk (because creaminess of milk competes with fruity flavors). Same portions as above.
Salted Maple Hojicha Latte (2 servings)
3 bags, 7.5g, or 3 tsp of Hojicha tea
224g of whole milk
20g of maple syrup
0.6g of kosher salt
shhh don't tell anyone - this one is better cold than hot hahaha
