INGREDIENTS:
For Marination Mutton :
Mutton - 2 kg (Cut small pieces @ wash 3 times)
Red Chillie Powder - 1 tsp
Salt - 1 tsp
Ginger + Garlic Paste - 1 tsp
Water - 300 ml
For Make Garam Masala :
Cumin seeds - 4 tsp
Pepper Corn - 2 tsp
Cardamom - 5
Cloves - 6
Cinnamon Sticks - 4
Nutmeg - Half
For Make Onion + Green Chillies Paste
Small Red Onions - 12
Green Chillies - 10
Water - 30ml
For Cooking :
Ghee - 3 tbsp
Oil - 3 tbs
Cinnamon - 4 sticks
Cardamom - 8 pods
Pepper Corn - 1 tsp
Cloves - 8
Pandan Leaves
Cumin seeds - 1 tsp
Large Tomatoes - 3 (Sliced)
Ginger + Garlic Paste - 3 tsp
Fried Onions - 1 handful
Chilli Powder - 2 tsp
Coriander Powder - 2 tsp
Mutton Stock - 400ml
Salt - 1 tsp
Dried Plums - 10
Mint Leaves - 1 handful
Coriander Leaves - 2 handfuls
Natural yogurt - 1 cup
Lime - 1 (Slices)
Fried Onions
Mutton Stock - 450ml
For Making Rice :
Basmati Rice - 2kg
Hot Water - 5 litres
Cardamom - 10
Clove - 10
Cumin Seeds - 1 tsp
Cinnamon Sticks - 4
Pandan Leaves
Bay Leaves
Salt - 4 tsp
Oil - 3 tbsp
For Garnish :
Lime Slices
