Okro soup is a popular soup in Ghana and other West African counties, that is usually paired with banku, eba, and konkonte, which are all starchy dumpling-like accompaniments.
It’s a recipe that allows you to be creative, and incorporate healthy and variety of ingredients, therefore, it’s very unlikely to find two people who cook Okro soup the same way!
Please enjoy this hearty, comforting Okro soup recipe and more importantly, be creative with choice of ingredients and have fun with it!!
Ingredients:
* 4 cups chopped Okro
* 4 cups chopped spinach
* 1 pound goat meat
* Cow skin 1/4 pound
* 1 cup dried, smoked herrings de-boned and rehydrated
* 2 blue crabs
* 1 sea bass cleaned, guttered and cut to small pieces marinated with onion, garlic, ginger, salt, coated with wheat flour and deep fried.
* Salt to season soup
* 1/4 cup palm oil ( sold on Amazon)
* 1 big red onion cut thinly (half for marinade in cooking meat, and other half for cooking soup)
* 1 Serrano chili
* 1 heaping table spoon of ginger chopped finely for soup
* Small piece of ginger blended with marinade for meat
* 2 cloves of garlic for marinade
* A pinch of aniseed (marinade)
* Half of habanero chili (marinade)
* 1 teaspoon of dawadawa (locust beans)
* 3 chopped Roma tomatoes
* 1/4 teaspoon baking soda

It is palm oil and you can get some from an African store or amazon.com. I hope you’re able to find some. You may however substitute with coconut oil.

U are just the best but I hate the fact that you use some spices which is not easy to get in the market ...so we become confused about the cooking without using your type of spicy

Thank you for your feedback. The only ingredient I used that may not be as readily available to most is the locust bean aka dawadawa. You omit that entirely or use fish sauce in place of it.

Whao , whao ,whao; I just tried it today and it was sooo yummy. It came out so beautiful and fresh . Do you know I've been made to believe that if you add onions to your okro,it won't draw and also if you fry your oil and pepper, the okro soup will just stay on a spot . But my result was wahoo. My husband loved it so much and even my kids. Thank you so much ma'am. You are the best. Keep up the good work .
