How to Make THE BEST Papas Con Chile Poblano | Delicious Potatoes With Poblano Peppers

papas con chile poblano is such a comfort meal for me. it’s like a stew of potatoes with these delicious smoky peppers- i love to eat it over some frijoles de la olla, topped with queso caribe cubes and scooped into a warm tortilla :)

4 poblano peppers
1/4 onion
2 large garlic cloves
6 potatoes
1 cup water (more or less depending on how soupy you want it)
2 tsp chicken bouillon (you can also use beef or vegetable bouillon)
salt to taste

i would say about 4. i’m sorry i never put serving size, i just feel weird telling people how much they should eat lol but the serving size for potatoes is usually one potato per person.
