Chinese Dumplings are my favorite food! Love the process of making it, and even though it may seem like it, it is really not a difficult dish to make. Here is my recipe and you can boil them or fry them either way they will be delicious!
Ingredients:
Dipping Sauce
2 tsp soy sauce
1 tbsp chinese vinegar
1 tsp oyster sauce
Chili oil
Minced Garlic
Dough
2 cups all purpose flour
1 cup warm water
Filling:
1/2 cup peppercorn water
2 Pounds ground pork 20-30% fat
8 oz fresh dill
2 tsp minced ginger
2 tbsp cooking oil
1 tbsp Peppercorn
1 tsp five spice
1 tsp white pepper
1 tsp salt
1 tsp garlic powder
2 tsp soy sauce add more or less after the test dumpling to taste
1.5 tsp chicken bullion powder
2 tsp oyster sauce
1 tbsp shaoxin wine
1 tbsp sesame oil

Oh my! I didn't have enough dill, so I used a third dill, a third Napa cabbage and a third Chinese chives. So unbelievably delicious! Juicy and so flavorful that the dipping sauce isn't even necessary. Thank you again Mikey for a perfect video. Now I'm gonna sit down to my dinner of hot and sour soup and dumplings courtesy of Mikey!♡

I always add minced water chestnuts for that extra crunch...the dill is an excellent choice rather than scallions !!! Yummy Mike !!!

Set out to make dumplings for the first time today and realized the recipe I'd chosen wasn't nearly descriptive enough. So grateful for your tips like stirring in one direction and pouring hot oil over the ginger and pork. I don't have dill today, but one day I'll try to recreate your recipe to a T. In the 80's, at lunch, my boss introduced me to Fried Peking Raviolis at the hotsi totsi Chinese restaurant we used tpo go to at lunch all the time. A few year later, I started traveling for work and I found out they were also called dumplings and pot stickers, depending on your location in the country. My boss would always ask the waiter to bring some fresh Ginger shoots, so he'd bite off the end of the fried dumpling, stick some ginger shoots in it, dunk it in the house soy sauce and down it. This quickly became a big hit for everyone at work to have it this way and the restaurant started serving it this way to anyone that ordered it. Now, jump ahead 15 years and I have unrelated stomach issues, so I try steamed dumplings in my town's Chinese restaurant thinking they'd be easier on my tummy. Had I known how good they were, I would have ordered steamed dumplings from the very beginning. Then, one day I accidentally dunked my steamed dumpling in the thick mooshi sauce and a new beginning started in my dumpling history. So, my cultivated dumpling formula is as follows= Steamed with fresh ginger shoots dunked in mooshi sauce and occasionaly one dunked in soy sauce. This is no joke... if this sound at all good to you, YOU MUST TRY IT!!! It's good w/o the ginger shoots too. In fact, dumpling are great any way you have them, but this is where my dumpling journey has taken me.

i tried this one but I wasn't able to put some dill on it so i replaced it with spring onions and tarragon . I am happy when i watched your video and most of all i was happy with my dumplings last night. When I had my first bite I remembered the dumplings I ate when I was in Shanghai. I made this today! I’m lazy so I bought the wrappers, and I made half with the dill, half with cilantro and green onions. I prefered the cilantro ones but both were really good.

Hey Mike, such a great recipe vid! But I just wanted to point out one thing. 茴香 is actually fennel, which tastes totally different from dill. Many people get confused between these two, so it's not a bad mistake to make at all :)

GRie_Fer Fennel tastes like anise. Dill doesn’t. Dill is 莳萝 (shí luó) in Mandarin.

OHHHHHHH! Now THAT makes sense. Fennel is FABULOUS! A little dill goes a long way & not my cuppa tea. I was going to sub CILANTRO (not a whole cup tho) but I'm willing to try the fresh fennel. *Thanks for the heads up.*
