What's your stance on the simmered milk vs cold milk milk punch debate from your experience? Thanks!
@TheWeePearl3 жыл бұрын
@@Arthur-nr5ci I am on team simmered. I believe it creates better and smaller curds which is very important for clarifying. When the curds are too large, there is lots of blockage and it becomes difficult for the punch to filter through- meaning it will take a lot longer and you will have a smaller yield.

Chickpea water is a game changer for vegans! I don’t think that everyone knew about it so many years ago but all of a sudden it is so impressive how you can use it in a meringue.

we've made a vegan milk punch with kombucha instead of a spirit, turned out great. though it may be difficult to replicate because a lot of it was just observation and do as you go kinda thing! so worth it !

I made this! It looked completely clear in the bowl I was using, but does look a tad cloudy in my Mason jar. I let it sit for 24 hours, but had trouble getting it to run clear. It took more than 2 passes. Probably about 6. I kept swapping it out the same as you, and running it through. It only ran a bit more clear when I let the curds settle more and did another run. I also used folded, thick muslin in a strainer, instead of a nut milk bag, and I was sure to pour very slowly. Either way, it tastes amazing. I feel the Velvet Falernum I used may have thinned out the flavor a bit, as I went with the 5 ounces you suggested. I think I would have preferred 3 ounces. Also, I got quebranta pisco, which is very thin in flavor. Practically like vodka. For people making this, be sure to double check what kind of pisco varietal is available to you, as they are not all created equal. I made the cocktail, stirring for the standard 30 seconds with a decent amount of ice to prevent too much dilution, and poured up in a coupe glass. Even without pouring over more ice, I found the flavor to be incredibly weak. It just tasted like vaguely sweet, limey water, where the milk punch is very flavorful, and tastes like a delicious vanilla lime tart. I will tinker a bit, possibly stirring for less time, and adding more milk punch per drink.
@TheWeePearl2 жыл бұрын
This is awesome. I’m so glad you tried it. The coconut milk does take a long time to start running clear. You can see mine still is a bit cloudy too. The homemade falernum really packs a punch. I wonder if you season your milk punch with citric acid and simple syrup, you might be able to enhance the flavor. I do that sometimes when the flavors become too muted after straining. Even if your falernum is a bit weaker and pisco isn’t the best, the amped up flavor of the punch will boost the finished drink. Thanks again for watching and sharing your results!

Try using coffee filters. A lot of them on deli cups. I batch in volume and the best way is to not overwhelm the filter. Comes out clear first time. Every time. Cool vegan option. Gonna try Ty

This looks great! Have you tried making it with the liquor and sugar added in to the original punch before clarifying?

You can add the liquor, but the sugar has a tendency to clog the filter
