Hi Evan, regarding the knives, can you please make a video showing how to properly grind and sharpen your knives and keep them sharp as a lazy bodybuilder. I don't have the time or desire to learn complicated techniques like sharpening knives with whetstones etc and please more full day of eating videos even its always the same, I love them thank you

I'm seeing the Centopani cookbook coming together, complete with descriptions such as: "The ingredient list for the sauce was developed, iterated upon, and scrutinized heavily to optimize the time of a home cook while simultaneously delivering on maximum flavor. Great video, as always. I watch almost all of your videos because I've actually gotten more and more into cooking and ingredients based on sports. Here as a German, you also have to be careful which canned tomatoes or tomato paste you buy. The products often contain Chinese tomatoes. Here in German supermarkets, you could rely on the brands Mutti and Oro di Parma, as they at least claimed to use tomatoes grown in Italy. I don't know whether this also applies to these brands in American supermarkets. However, the "San Marzano" tomato is a variety and not a typical regional designation. It is therefore also possible to grow San Marzano tomatoes in Germany or America (or China). In the past, I found your thoughts on olive oil interesting. I am lucky enough to be able to get olive oil that is really cold-pressed from a direct importer because I live rather close. 100 bucks for 5 liters is a very good price. I really don't trust supermarket olive oil anymore. Keep up the good work! And no - I like your kitchen as it is. 😃😉

The browning that's on the pork chops before putting them in the sauce is from the maillard reaction. It creates a lot more flavour rather than putting it in raw.. Also, the "drippings" in the pan once you've taken the meat out is called "fond". When you deglaze the pan and scrape all of that off the bottom it adds even more flavour

Hi Evan - great recipe and even better message to all of us to sit down and enjoy being with our family and friends. Question - has your sauce ever been too acidic? And that you need to take down the acidity? I am going to try a recipe for sure and just use whole tomatoes. No tomato paste and no tomato purée. For some reason the spaghetti sauce that I made lately has been too acidic and I can’t figure out why

Come on Evan, onions can be good in meatballs! Albeit very little amounts though and if you do, they need to be really soft and tender. I've had meatballs with crunchy onions and it was a huge turn off. 🤣 but yours look amazing. I'd like to try them.

A little tip from a german butcher/ cook: Cut the garlic in half longwise and you find a small green string through the center. This makes you stinki. You can easily pull it out and you have as teh result the taste and freshness of garlic but not the ,bad smell and breathe

Sometimes italians like to use garlic just to flavour the oil where they cook the sauce and then remove it! That just gives you an ideea how subtle garlic should be.

San Marzano is a variety of tomato, borrowed its name from the town it originates from: San Marzano sul Sarno, in the Campania region. SM tomatoes are generally sweeter and have less and smaller seeds. This makes them the go to choice for pizza and other sauces. And of course, having similar weather conditions in California, SM tomatoes ripe just fine in 'Murica, just like Southern Italian grape variety 'primitivo', which goes after the name 'zinfandel' in the US.
