For those of you on keto or carnivore diets, letting the kefir separate into curds and whey uses up more of the lactose in the milk, creating an even lower carb product. Also B vitamins increase the longer the kefir sits.

I bought some Nancy’s organic kefir and this particular batch had thickened more than typical commercial drink kefirs. I had to cut open the carton and scoop it out. It was like THE MOST HEAVENLY SOUR CREAM! I can’t wait to make thick kefir at home. Thank you.

I put the whey in my fermented foods as a starter culture to help activate the process of fermentation. Whey is very versatile. Today I'm making pickles. Also i dry the avocado seeds, peel them, cut them up in slices, and crush into p😮owder. I put the crushed avocado seeds into my smoothies and yogurt. The seeds have a lot of nutrients

@@marreolayou may have to wait a few weeks as it will take that long for their grains to grow enough to be able to share them. I do like the idea of pay it forward. I will look at this for the UK where I live. I had to pay for mine but I bought 40g as 10g didn’t look like enough, the 40g was enough to make a litre easily and in a few weeks I’m hoping to be able to share them.

My grains are grown on grass fed local milk, they double in size in a few days. I would LOVE to share my abundance free with anyone who wants. If you cover the s&h I’ll send kifir grains to someone interested. I bought mine off of Amazon and am Very pleased with them. However, they multiply so fast I have a lot of them in the deep freeze. It isn’t something that a lot of people are interested in. So, my bonus kifir awaits someone to stop by this video and ask for free kifir from the piney woods of South central Texas.

You can boil down the whey to evaporate the liquid until it becomes a dark caramel delicasy the consistency of Nutella. Called brunost or getost.

I was making and drinking homemade kefir (I used coconut milk) for about a year and then I accidentally ate some dairy with lactose and I had no problems!!!! So I think the Kiefer actually healed my gut enough that I could then start tolerating lactose! Boy have I been enjoying cheese! I do eat primarily grass-fed milk cheese, eliminating as many omega-6 as I can! Thanks again for all you teach this community!

The way I thicken my kefir is after I ferment my kefir after 24 hours and I strain it I add a little bit of whipping cream to my Kiefer, and that seconds it because then my whipping cream becomes fermented, and it thickens my kefir, which is by the way delicious.

yogurt making is a different fermentation and microbes... You can't make official greek yogurt this way. 🙁

They said when I picked it up for an extra 100 I could have all the contents. Organic meats and cheese and packets of yogurt and kefir grains. I'm so excited. I will at least try the kefir fermentation and see how it works! Thank you for your channel. It is absolutely a gift from God watching your blessed hope bloom!

Great information. Thankyou very much. I am awaiting delivery of fresh grains in the post. Your videos are invaluable. Adrienna, just as an aside, I have found a great use for my fermented vegetables other than on salads etc.. I have discovered Kimbap/Gimbap, and the fermented vege's are fantastic included in the roll up of these tasty slices. I can pack so many in!. Perhaps you make them too. I discovered Kimbap after watching Attorney Woo on Netflix who only ate only these! Totally delicious.

Thank you for the suggestions for using the whey!! I have always just thrown it into my compost/garden because I tried it once and didn’t like the flavor and so didn’t know what to do with it. Also there’s always so much I get overwhelmed trying to figure out what to do with it. I’m going to taste it again and then use it in dressings to see if I like it.

Oh my goodness, you are THE BEST teacher Adrienna! You think of everything and answer all my questions. Here's one: what is the broad spatula you are using to hold back the kefir grains when you're draining out the whey? I'm not able to get very much whey out cleanly before the whey and kefir grains start co-mingling. I'm using a half-gallon jar, so a long broad spatula like yours might do the trick. Thank You!

This is a fantastic video, thank you for this. I watched your other video on making Kiefer from the kiefer solids which I did, however I obviously left it a bit to long and it’s now thicker like in the start of this video, so even though I’ve separated them like in the last video I’ll have to separate the white and clear liquids when they separate again in the fridge lol. This video has given me a lot of information and a few ideas to. I have lost a lot of good bacteria in my gut and can only eat bananas, milk, potatoes, rice, carrots, and either beef or lamb. I’m hoping through fermentation. I will be able to gain a lot of the good bacteria back so I can start eating healthier and able to get nutrients from a larger variety of foods. I have to use the FODMAP diet to die to IBS, so if you have any suggestions on what fermented foods I could look at. I would welcome the advance. Ive already started with sauerkraut which seems to help my gut. I’ll be looking at making my own and also looking at fermented carrot with the clear liquid from the milk I now have as a starter. Thank you once again and I’ll be getting you a cup of tea 🍵 🫖

I never use a spatula to separate grains. I just tap the strainer against the wall of my bowl, and it separates itself! 😄

Started making milk kefir 2 months ago. loving it. Wanting to make yoghurt kefir. Just wondering if it can be done with 1% milk? I track my macros, so 1% is my preferred milk to use. Will it work for yoghurt making?

The benefits of whey make me think twice about whether I'd even want to thicken up kefir very often. But then again, I'm already making a very thick L. reuteri yogurt and looking to expand to kefir for a broader probiotic benefit.

@@binathere2574 It's worth experimenting with, however, the instructions I'm using are to ferment at 100F for 36 hours, which is significantly different from kefir fermentation.

Can you use the kiefer grains in cream? Would it make a yogurt type mixture? Could then if this is the case be able to be frozen once place in say a plastic tube with say vanilla pods to make vanilla ice cream filled with probiotics?

I make kefir regularly, but with goat milk. However, after straining the kefir before it has separated fully, the kefir grains are left in the strainer, and I preserve them in a small amount off fresh milk in the fridge to be used for the next brew. The way you showed how to make the thick kefir in your video (thank you!), you didn't seem to save any kefir grains, but eating them with the kefir itself? Did I miss something? P.S. In goat milk, the kefir grains grow very slowly, so there won't be any surplus to set aside. It is rather like caring for a flock of chickens 😊

Love all that you are sharing with us, keep up the great work. Just a small point women and men do not metabolise food in the same way so your comment about thinking that what’s true about men’s strength from fermented whey and women being the same is probably not true; but not a reason not to drink it, it’s still great for our gut health.

I like all your videos. Continue the good work. Can I ferment “raw unpasteurized milk” using milk kefir grains. We used to buy raw milk from farm, giving them to kids hot (after boiling). But not sure we can just ferment the raw milk and give to kids. I am making water kefir and I want to add some flavor to that, so that I can make them easy for kids. If you can make a video about it, that would be great. Thanks.

I'm new to this and the woman I got my grains from told me that if I wanted to take a break to cover my grains with milk and leave them in the fridge for up to a week but then when I'm ready to ferment again, to rinse those grains and start again. But what I'm seeing from the video is not to be rinsing grains - but if they sat there for a week?

Will this method for making thick kefir work with plant based milk as well? I have Hashimoto’s Disease, and can’t eat dairy. Thank you☺️

No it won't, but you can make the plant milk by not straining out the pulp which will help make it creamier... but not thick like this. Sorry!

Not during the kefir making (while the grains are in the milk), but after you strain the grains the next day, yes - then you can add v.bean👍

Chronic diarrhea can be serious, so it's best to be working with a doctor and nutritionist who specialize in GI problems. That being said, kefir could help providing it's used in a therapeutic manner. In other words, consuming on an empty stomach and eliminating refined foods from his diet. Staying hydrated and including a very high percentage of fiber are also likely to help. If your husband is a C-section baby or has had an illness that required a lot of antibiotics, a FMT may be indicated.

This only works with dairy milk because of the whey. Non-dairy products do not contain whey and won't behave the same.

Does using soya milk for kefir also produce the same quality whey? I don’t drink or consume dairy.

Plant based milks do not produce whey because the whey only comes from the milk protein called casein. there's no casein in plant based products, sorry!

No because whey & casein (milk protein) are needed. There's neither in non-dairy milks. Sorry!

I store my grains in full fat milk in the refrigerator. The grains seem to keep working n ferment the milk. Does that milk become kefir too? I’ve been discarding it but wonder if it is just a slow motion way to ferment while I’m on vacation?

No because it is the whey separating from the milk protein casein that makes this work for dairy milk kefir. THere is no whey nor casein in plant milks including coconut. Sorry!
