The photos will be harder to get in from Illustrator but if you're doing editorial design then InDesign is the app to go

What you have done in Indesign, adding text to the spiral plus an image inside, can it be done in Illustrator?

The line segment tool dropdown was in Illustrator, not Indesign. Give that a try!

I don't think there is a "Type on a path" tool in Photoshop so I would say no unfortunately

Did you click on the path itself? Sometime it's also finicky, you can try pasting in the spiral linework again and see if it works.
