Made a bunch of these! I used a bit less sugar (35 g) and just mashed almonds, raisins and chocolate chips together :D Very tasty, especially once you let them dry out (I usually leave them in the oven for an hour or two after I turned off the heat).

Thank you for this recipe ... I have been waiting for it with bated breath and am definitely going to try this tomorrow! Whilst awaiting your expertise, and having thrown out one batch already, I decided to try using the Okara to make bean(pulp) burgers. They had the texture of fish cakes (!) and turned out very well indeed even though they were so quick and easy to do. I simply added finely diced onion, garlic, spices, tapioca flour and a flax egg to the pulp, coated the patty in golden breadcrumbs, fried 'til brown and then finished off in the oven.

Thank you so much for the recipe! The biscuits are absolutely delicious and I needed to do something with all of my left over okara (just started making tofu). I used GF flour for mine and they turned out like a cross between a cake and a biscuit. Love the soft, nutty texture of the okara. Next batch I'm going to try adding some cardamon seeds - I think they might add an interesting flavour. I make all of our dairy from soybeans and have so much okara than I know what to do with. I dehydrate it and use it as a protein powder but I have more than I know what to do with. these videos are very helpful. I will e using some of it for baking and making patties. awesome thx!

I reduced the flour and used some cocoa powder plus I did half and half with rice syrup and coconut sugar: they were crispy on the outside and lovely and moist on the inside. Thanks for the recipe and inspiration.

Just made another batch of tofu...meaning it's okara time! I've made a smaller batch today but still left with plenty of okara and my freezer is already full, pack with more okara from previous batches amongst other things. So what to do... okara mochi or okara biscuits, decided on biscuits today. I had about 540g of okara and decided to use it all...a little reckless I realised soon enough, took quite a workout to mix the dough. I was also short of almond flour, so used some coconut flour as well (to make them gluten free). Was a bit unsure how they will turn out so I've only baked a third of the dough (well...couldn't possibly bake all of them in one go anyway). Wrapped the rest to bake tomorrow (with any adjustment if necessary). First batch out of the oven just now, and they worked out quite well though it took about 40 minutes in my oven even though I've made them quite small. It's not dry but I may need to add a touch more oil to the next batch before baking and see it that will improve. Once I finish them, I will try okara mochi! I'll be eating a lot of them for a few weeks at least (love them but...too much of good things...). 😅 Thank you Fan. 🙏

Hello! I am new to making soya milk and so have just discovered okara! Just to clarify - is the soya been pulp still raw before you use it in the cookie? Also just to confirm can i freeze the raw pulp or okara? I am very excited about this new way of cooking and that i do not have to waste anything. Yes the pulp is extracted from raw beans so it's raw when you use in the cookies. You also freeze the pulp raw. This is the traditional way of making soya milk. I don't ever cook the milk first with the pulp still in. You get much better taste soy milk with this method. Enjoy! x

Hi darling, there’s no need to cook or boil it. You can use it raw. Obviously, it needs to be cooked before being consumed. Keep it in the freezer and take out the portion you need. It should be good for at least month or so.

This recipe does not require baking powder or soda powder. The texture is slightly soft and chewing. If you like them crunchier you could leave them in the oven after baking time till cool.

Thank you for sharing this video tutorial. Do you know you can make Indonesian fermented oncom and/or tempeh using the soy pulp? They both use "ragi oncom" (or oncom yeast starter) and/or "ragi tempeh" (or tempeh yeast starter), respectively. It is hard to find "ragi oncom", but you can search youtube and there are some videos showing how to cultivate "ragi oncom" from a corn stalk. As with "ragi tempeh", you can basically find some friends who already have tempeh and thinly slice it to let it ferment in a 30°C room temperature for about 12 hours, then dry it before pulverize into power, and add some 3x rice flour (1:3) to make the "ragi tempeh". Failing that, you can buy tempeh from any oriental market that sells tempeh. Or, buy the "ragi tempeh" from Amazon, etc. Cheers.

Definitely freeze it unless you’re using it within a couple days. Freezing can keep okara fresh for at least a month. I have kept it longer.

Today i tried make tofu for the first time and failed (lemon didnt work i will have to buy nigari) and i have a lot of okara left. I did pancakes for lunch and yours biscuits. I dont use all purpose flour, i did them with coconut one (120/30g ratio) with 30g spelt flour and much more milk but they turned out great, thanks for inspiration.

Regarding cups, you need to differ between US and british cup, too. Some other day, I needed the opposite way round: calculating cup into ml. I used wikipedia's data but it seems that this is not accurate at all (!) But at least, I didn't had to throw away my hard work and it was eatable... You get a soft crunch which I like. But if you like them crunchier you can leave them in the oven to cool then they crunch up a bit more.

Yes they're supposed to be soft crunch. If you like them crunchier you can leave them in the oven to cool after baking time.
