Mrs Lin thank you so much for the recipe I have just finished my bowl of Tonkotsu and it was amazing! Cooked the broth for 22 hrs, 3 days for the Chashu pork, and 24 hrs for the eggs. It was as good as any I have eaten in any ramen noodle restaurant.

This is a great video! I have tried a few times and just cannot seem to get the broth right. It is either too watery or too... well too porky tasting. It tastes nothing like hakata ramen I’ve tasted or seen others make. I’m not sure what I’m doing wrong to not get that rich milky bone taste.

I used pork trotters and a few chicken feet. I boiled for 24 hours. I used charred onion and garlic and ginger. It turns milky around 10 hours with little flavor but then is porky at the end of the 24. Could it be too much meat?

We only use the marinated sauce for Chashu/Egg because it's flavored with both the meat and egg. Add more or less to the desire saltiness for your taste.

This video shows you how to make the most basic ramen broth. To make different varieties of broth requires simply making adjustments on how the broth is made and what ingredients are used. For Hakata version of ramen broth, the tonkotsu broth will need to be seasoned with shio or salt, in order to preserve the milky white color of the soup. Typical toppings often used are thin slices of chashu, wood-ear mushroom, beni-shoga, crushed sesame seed and crushed garlic. Thank you for watching!

You want to simmer the broth for 6 to 12 hours and making sure the level of the broth stays the same. If the broth gets low, add in more water to maintain the amount of broth. If you want your broth murky looking, then you can boil the broth but try to keep your eye on the broth because the broth may dry up.

Don't Want To Join Google+ Using pressure cooker can get all the ingredients cooked very fast and soft. However, the flavor won’t be as good because flavor develops over time. I have always cook it the traditional way so I would start out with 30 minutes first. The bones and all of other ingredients can fall apart if you cook it for too long. Try it and see.

Yes, 6 to 12 hours are huge differences but it all depends how much flavor or how thick you want of this broth. Longer is better but 6 hours is a good length and you can taste it as it goes.

Pig's foot was used in this soup and was cooked in boiling water for about 20 minutes to get rid of the skum.

Yes, I used trotters for this soup. Hair on trotters are fairly common but you can easily take it off. Most butchers will clean it but some get sloppy and that's why you see the residual hairs. Boiling trotters for that many hours should have killed off all the bacteria but if you don't feel comfortable using this meat, you can easily use other part.

supersonic4400 It only takes few minutes for the pressure cooker to cook anything. However, all the ingredients may be too soft. The beauty of cooking it slow is that flavors of all the ingredients will be slowly released. From my experiences, soups taste so much better when cooked slowly. If you try cooking this broth using the pressure cooker, please let us know how it turns out and do not hesitate to share it here.

Get pork hock ( a few ) clean it, add water and simmer on low heat for a few hours until gets cloudy , if water is low just add more and boil until it gets cloudy . I'm Hispanic , don't need to use clean water to get that cloudy .

Gregory Hill This is a base and is relatively light in flavor. You will need to add salt or the juice from the marinade for making ChaSiu pork which you can find in our other video.

Yes, you can definitely freeze the broth. We would recommend finish it within a couple of months. Any food in the freezer may pick up the odor from the freezer if leaving it for an extended period of time.
