I just learned of your product from a Rick Bayless video. I usually just buy Maseca brand, but I am eager to raise the quality of food, with a superior product. I can’t wait to order some. Great video! Simple and to the point. If people only knew just how easy it is to make their own tortillas, let alone how MUCH better a fresh tortilla tastes, they’d never buy tortillas at the grocery store again!! 😋👍

Do you put any oil or something in the pan, or do you drop it in a dry pan?

When cooking tortillas on a comal, you generally don’t need to add oil or other fat, though it’s optional if you prefer. Use a preheated, dry comal that’s well-seasoned to create a nonstick surface. Heat the comal over medium-high heat until it's hot. Place the tortillas on the comal and cook for 20-30 seconds on each side until they have brown spots and puff slightly. Adjust the heat as needed to avoid burning. After cooking, you can wrap the tortillas in a tortilla warmer to keep them warm and soft.

I noticed in this video she didn't specify to use warm water but the blog recipe states to use warm/hot water- I'm wondering what would happen if you use room temp water and if it would be noticeable?

When you use room temperature water, the dough might not come together as smoothly. The tortillas might end up a bit denser or have a different texture, and they may not cook as evenly. Warm water helps the masa harina to hydrate better and gives the dough a more consistent texture, which generally results in a better final product. So, while room temperature water will still make tortillas, using warm water is likely to give you a smoother dough and more evenly cooked tortillas.

Yes! To store tortillas, make sure your tortillas have cooled completely. Then place them in an airtight container, or tightly wrapped in plastic, in your refrigerator for up to a week. Storing warm tortillas before they've cooled, may cause condensation which can lead to mold.

Just made the switch from Maseca and ugh no no no. I don’t know why they are so stiff and flat. How hot is your comal???

We're happy to hear you made the switch to Masienda! Our masa harina is made to create softer, more flavorful tortillas. If your tortillas are coming out stiff and flat, it might help to check the temperature of your comal-it should be hot enough to cook the tortillas quickly without drying them out. Also, consider adding a bit more water to your masa; sometimes, increasing hydration can make a big difference in texture. Let us know if we can help troubleshoot.

I use 1 cup of masa and 1 cup of warm water, wait 20 min etc.... and I can't succeed... it either splits apart in the press or when trying to transfer from the plastic to the comal... I know it's not the mathematics of theoretical astrophysics but g*ddamn I can't successfully do it... I'm going to have to buy store bought tortillas forever lol
