Canola oil is definitely the way to go. I made this with olive oil before, and not only does it get bitter from the polyphenols, but it's more of a mayo consistency, not that fluffy thick goodness that you got.

Very interesting take on garlic sauce! I haven't ever seen it in mediterranean restaurants in Poland, just standard garlic sauce. So I will give it a try tomorrow! Have you tried to store it for a long period in the fridge or even freezer? Since it is oil based, it might keep consistency after defrosting, right? Would be great to make big chunk of it without worrying about mold.

Great question and we haven’t tried freezing it yet. Every time we make a large batch it doesn’t last long enough - we eat it all before we have time to think about freezing any 😁

@@BBQandBottles I live alone and due to recent pandemic situation I can't share with anyone, so storage was important to me. I put it in hermetic container in the fridge and it is as good as fresh still, without freezing. Thank you for that recipe, completely different experience! At first I thought I added too much salt, but then I realised it's lemon in the background enhancing flavor. Can't wait to show it to my family when epidemy is over!

Good question... my initial reaction is that I don’t think so. There’s something about having really fresh and firm garlic that makes this emulsify easier... so I think you’d have trouble using roasted garlic. I might be wrong on that though.

You need lectins in your oil to make this work so you need to use canola there chef. Olive oil will also skew the whole taste of the sauce.

Have tried this twice, followed the recipe and both times it has turned to sloppy soup. What am I doing wrong please?

Here are some common mistakes. i) Make sure you go in really slowly with the oil, ii) Use fresh garlic, and iii) make sure you're using canola oil because of the lectins in it. If you get that soupy mix at the end, try removing 2/3rds of the mix from the food processor and add in an egg white. Then waz that in the food processor for a minute or two and see if the emulsification starts again. If it does, then slowly add in the 2/3rds of the mix you removed back in. Go SLOW! Hope this helps.

I tried your recipe yesterday but the outcome was disastrous, the garlic became very liquidity and not thick, I added the oil very slowly but still it became very loose?!!

Maybe try it again and add in an egg white after you pour in the first 1/3 of the oil. That should help it emulsify. Sorry to hear it didn’t turn out the first time.
