This looks great, thank you! Can I just use cheesecloth instead of the parchment paper & foil though? Also, I never purchase alcohol -- would it be good without it?

Try brandy, or rum, extract. The alcohol also acts as a preservative, without it your storage time might be a week or so.

No it should be water tight. So no water should reach the cake. Cheescloth makes for a wet pudding which will not be nice.

I'm curious about the flour. Puddings aren't meant to rise...so why the self-rising flour instead of plain flour?
