If you want to try these at home I've included my ginger biscuit/cookie recipe underneath the products that I used, listed below ⬇️ It's been a while since I got to make some cookies, so when I got the chance lately I made the most of it and created a whole load of really pretty mermaid and unicorn themed cookies, both with and without fondant.

Ginger Biscuit/Cookie Recipe:
350g Plain Four (All-Purpose)
1tsp Bicarbonate of Soda (Baking Soda)
2tsp Ground Ginger
100g Butter
175g Soft Light Brown Sugar
1 Large Egg
4tbsp Golden Syrup (Corn Syrup)
Sift the flour, bicarbonate of soda and ginger into a large bowl. Add the butter and rub in with your fingertips until you have a mixture resembling breadcrumbs. Add the sugar and give a good mix.
In a separate bowl, beat an egg and golden syrup together. Add to the flour mix and mix well. Once into a dough wrap in cling film and leave to chill for at least 30 minutes.
Pre heat oven to 190°C/375°F/Gas Mark 5 and line to baking trays.
Roll the dough out on a lightly floured surface to a thickness of about 4mm/ 1/4 inch. Cut out shapes and place them slightly apart on your lined baking tray. Bake for around 8 minutes until golden brown. Leave too cool on a wire rack.
