I love this recipe. I've made it twice in the past week. As a non-vegan I'd never had egg salad because I hate boiled eggs but this is great. I added some dill, peas and chopped capers to mine. Thank you!

I add pickles, white onions, celery & fresh parsley - all very fine diced. Before all the vegan mayo hit the market, I used plain hummus as the base.

Another trick to getting egg salad texture is to use firm or extra firm tofu. Drain, press & cut the block in half. Crumble the 1st half (this resembles the yolk texture of the egg) and slice the other half into about 1/4” slices then dice them (this resembles the whites of an egg) mix together w/ mayo mixture and Definitely add celery &/or dill pickle cubes for crunch. AND Liz, ur GLOWING😊

You can get rid of the cottage cheese problem by using an egg slicer. I don't bother drying my tofu, I just cut it into blocks and put it through the slicer in two directions. That makes the texture of a traditional egg salad -- at least the one I grew up with.

The egg salad was so good, i made your recipe and added some chopped bell pepper to it as well, along with green onions, and little bit of fresh and little bit of pickled jalapenos and black pepper..... Sooooo delicious!!

For the yolk you could try blending chickpeas with apple cider vinegar and kala namak. It works pretty well.

yep, this is how I make it. black salt changed my vegan life. I grew up in the midwest and so a lot of the casseroles and salads I grew up were hard to replicate at first. curious if there are other things you, liz, much prefer the omni version of. maybe I had the same issue and have found a good dupe.

I make a very similar eggless salad but add celery *salt* in abundance (as well as actual celery chopped fine, pickle relish and dill). It's so much tastier the next day!

You could add chickpea scramble eggs (orgran easy vegan egg) into it for the egg yolk part and to add different texture . I have all the ingredients to try your recipe so I will see how it is with the chickpea scramble and tofu together

Yours looks good. I make mine similar as yours except with a little bit of pickle juice, and celery or celery salt. And I chop up the tofu smaller, like small looking like egg white.

I like to add chopped pickle, dill, and smoked paprika to mine. Also I use chickpeas instead of tofu and leave out the black salt for more of a chicken salad vibe. I'm definitely gonna try tofu next time!

When I make this I like to dice half of the tofu, set aside, and crumble up the tofu and mix with the mayo stuff. Then add in the diced tofu at the end so it retains its structure and texture :)

natural flavoring can mean flipping anything, its another nefarious little ingredient discrepancy that can often be non . vegan, sometimes its extract from a beaver gland, something from a sheep, just something weird. Its truly abhorrent what food companies will do to enhance the flavoring of their products, America is amazing for so many reasons but our food industry is disgusting, the chemicals and pesticides we use are hardly tested and have literally never been consumed by any of the life on this planet for the history of time. So, considering a company as big as Hellmans, who knows what it could be, could be nothing, could be anything

It's a deceptive term which needs more transparency and regulation. Food companies can use all kinds of weird stuff under the umbrella of "natural flavoring" that may not be healthy.
