Before I went vegan, dairy mozzarrella was one of my favorite cheese. When I went vegan I was keen to try every vegan mozzarella recipe that the internet could provide but nothing came close to my liking. I made it my number one mission to come up with my own vegan mozzarella recipe that was as close as possible to the real thing. As much as I am a passionate Chef who loves developing vegan recipes and have my influence in making this world a better place. I need to be honesty and let the world know that I develop vegan recipes for a living, some which I give away for free but my show stoppers are only for those who supports this initiative on my Patreon account.

Milk isn’t what makes cheese cheese. It’s the fermentation process. That’s why his cheese looks so spectacular. He’s making actual cheese

The only explanation as to why anyone would leave nasty comments on a channel such as this is that they must be so sad and miserable in life that they try to share this sadness and misery with others in order to rid themselves of some of it. Hurt people hurt people. Don't take it personally, they just don't know any other way to deal with themselves. You're doing great work, I absolutely cannot wait to try your recipes. I tried to make a clearer written recipe for the cheese because I was having a hard time following it, hope it benefits people looking to make the cheese ! Soak 30g raw cashew nuts in 120ml boiled water or soak them overnight in cold water. keep aside for 30 mins if boiled water. 5g agar agar in 100ml boiled water mix till dissolved keep aside 20g psyllium husk powder in 30ml cold water keep aside 30min --- he states 45g but it seems like it might be a typo/incorrect... You can see it at 2:34 & 2:56 use your best guess. I think it's around 20g. Blend the nuts and water in the blender, pulse thoroughly till you don’t see any grits of nuts. It needs to be super smooth. Strain the milk with a sieve if there’s any grits. Put the milk back in the blender with psyllium husk mixture, agar agar mixture, 30g nutritional yeast, 5g garlic powder, 30g odorless coconut oil, 5ml maple syrup, 5g Himalayan salt Blend thoroughly add tapioca starch 30g + fermented starch water 30g * from @Veronica Ciccarelli comments below instead of fermented starch water you can use: wheat starch 20g + 10 ml water + lactic acid/ (1tbsp lemon juice + 1tbsp vinegar 20 grams of starch) and transfer to a pan. Keep the heat low and whisk non-stop until it thickens. Refrigerate for 3 hours or overnight. ___________ fermented starch water: wash dough thoroughly at least 10 mins, water should look like full cream milk or cream itself let water sit for 1 hr scoop off water and add more fresh water and repeat 3 times transfer to shallow and flat stainless steel container add water and leave for 3 days throw out moldy water should look snow white yogurt consistency

It is 4,5 grams psyllium husk (45 gram is a typo) 1 tablespoon is 6,2 grams on my food scale. For everynone that does not want to scroll through all coments or is new to vegan ingredients.😊 going shopping now, will try this tomorrow. Will try sour starch "polvilho azedo" (not the doce polvilh) instead of fermenting myself though, it's already fermented Maniok starch. (Tapioka)

It turned out awesome, but it was more than I thought, enough for 3 pizzas! I will not use the maple syrup next time though. It does not need to brown in the oven for me. I just don't like the taste. Other than that. Awesome!!!

I would buy this if it were at a comparable price point to Daiya. My only advice for a minor change is to try a plant based probiotic. It should help you control the starch fermentation, and speed it up.

Yours is the ONLY vegan cheese I've seen that actually stretches like real mozarella cheese. All the other vegan cheeses I've seen look well... mostly disgusting and the cooks always spread apart the cheese so fast because it has no consistency so the cameras won't see it's not even stretchy. I use vegan lactic acid for a more dairy moth feel. Also, were you aware that a tiny bit of baking soda raises the ph level of a cheese so no sweetener is required - same with marinara sauce. I discovered this when making vegan mascarpone!

Oh wow that's a great tip! Any chance you can share the vegan mascarpone recipe? I just made vegan tirimisu and had to use vegan butter whipped with vegan whipping cream, it came out pretty good 👍

Amazing idea! I've made mozzarella by fermenting rejuvelac before, but I love any new way to use leftover starch from washed seitan. Can't wait to try it :)

When you say there are 2 items you didn't share, can we still make the recipe?? I have converted these ingredients the best Google allowed... ¼ c nutritional yeast 1.5 tsp psyllium husk powder 1.5 tsp garlic powder 1.5 tsp Maple syrup 1 tbsp Agar Agar ¼ cup Cashews ½ cup fermented starch 1.5 tsp salt 1.4 oz coconut oil Trying this now! Hi!! Im trying this recipe! I need to achieve that texture! Its incredible in the video. Its interesting to know that not all the psyllium husks are presented at the same. For example, i bought one that is more like a powder, and not have the entire "husk". So maybe 2 tbsp of your entire husk psyllium, is like 1 tbsp of mine, because the first one have more air between particles. Im from argentina!! So i dont know if im expressing myself well hahaha A big hug!!

I've tried to make this recipe and ended up with yellowish and unpullable cheese. Is the measurement of nutritional yeast correct? what kind of starch did you use? is it cornstarch or tapioca starch?

Hi! I made cheese with this recipe, and first: 45 graf psyllium is too much than TJ show on the video, and i understood that nothink good will be. But i tried, and what can i say? - Yes: i was right. It was not vegan cheese, it was a glue.

If you want golden pizza, use the ighest temp possible and add diastatic malt. Can't wait to try this cheese.

Very Happy Chef!!😋🍕🍕😋(with Vegan Mozzarella! 🧀💚). This was a very interesting recipe. I plan on saving the starch from my vegan ham project... I really would think there would be a more 'real', deeper flavor to the Mozzarella with the 2-day fermenting process versus the short cut methods. Not there isn't a place for them either. What is your perception on this observation 🤔? Thanks. 🤗
