Hi Sai -- it is bittersweet so you may have been on the mark or slightly over the mark. Try again and back off the darkness a little. I didn't get it right my first few times. Hope this helps!

It should not be acrid - distasteful. It is ideally pleasantly slightly bitter. Hope that helps.

@@umamizaddy I meant no offense. I wasn't asking. Fish sauce isn't a part of caramel sauce which is used in the creation of the end product like ca kho/thit kho. You use fish sauce separately to make them but don't add it while making the caramel sauce itself. Perhaps some do but I've never known it to happen in Vietnamese households (usually).
