Im making cornbread waffles tonight because tomorrow will have cornbread waffles with fried chicken. I make my waffle batter from scratch now but I remember once making it with jiffy when my latehusband and I made it together. He always had those jiffy boxes in the pantry. I have found that the batter is even better if you use more than one type of peppers. Not to make it super hot but added flavor. Started out with jalapenos, now I love poblano peppers and serrano peppers. Sometimes still add jalapenos for a third pepper. I chop a bunch of peppers when I roast my poblano peppers. Then freeze them flat. Whenever I want peppers, they are already chopped and don't take long to thaw. Just have to decide how much to add to the batter. I add more peppers if I don't have pepper jack cheese. Cornbread so good it makes a great snack. Which is why I make a batch the night before frying some chicken. I enjoy eating waffles as a late night snack. I recently got a stuffed waffle maker. Thinking I will make some barbecue chicken stuffed waffles with half the batter of my spicy cornbread waffles. Time to go make waffles.
