Apparently, this people live in the rural village and they don’t seem to have a lot in their hands. They can’t go to a local Walmart where you can buy everything. They use what they have. At least they are reusing the plastic instead of throwing it away. How about you making your own yogurt with clay pots and metal pitchers and throwing all of you plastic right in the trash so it can end up in landfill? 😉

Secret is, you cannot add yougurt to milk when its hot. Wait for milk become warm and add small amount of curd when you can touch the vessel with boiled milk for 10seconds😂😂😂. I dont know the exact temperature. May be 60-70°c

You are obviously making Dahí to sell it. Looks delicious! Thank you for this demonstration. I have liked and subscribed. Please answer this question for me: I notice that for that whole basin of milk, all you use is less than 1/2 a teaspoon of Dahí, and you gently added it in only one spot. But the whole basin of milk became Dahí! I am amazed! Is that tiny amount of Dahí all that is needed?

I am amazed too.. I think it's the ambient high temperature (& humidity) that makes the yogurt that quick so very little starter yogurt is required. Colder climates will require at least half a cup to make and the vessel covered with cloth to maintain a constant 70 degrees F (& it takes 12+ hours to set - again in my experience over 20+ years making it in South India and North America). Noticed the same when fermenting idli flour too.. In South India a small amount ferments in 6 hours where the fermentation overflows 3 times the original quantity but in America, it rises by maybe twice in 12 to 15 hours after keeping it in a preheated oven.. one thing though.. why keep the dahi in the freezer? just to thicken?? and for how long? not sure why that is required.. maybe for a marketing purpose? to sell "thick" dahi?? not sure about that.

When I was in Mumbai I never buy Yogurt. Instead I prepared at home. One litre full cream milk and spoon of yogurt keep my stock last for at least 4/5 days. Far economical than buying from market.

The place is neat and clean but few things if taken care of: * Use wooden spoon to stir milk *These plastic buckets are meant for water and not for pouring hot edible things... It's totally dangerous for health *Please use clean clothes for covering the curd utensils
