These thin, elastic crepes filled with mango and whipped cream are hugely popular at yum cha (dim sum). But if you don't want to wait until next time you're out for dumplings, you can make them at home too.

Years ago in Malaysia, there was a huge crave over 'durian crepe' - bits of sweet durian flesh with a generous dollop of whipped cream, all wrapped in a thin layer of yellow crepe - popularised by online food entrepreneurs. For about a couple of years it became one of Malaysians' most favourite desserts. I thought it was some kind of localised French dessert. I didn't know it's called Yum Cha pancakes. This is new to me!

Over two decades of lunches in Sydney CBD. Yum Cha Mango Pancakes are the only desert I crave for.

I live in Los angels and went to Australia when I graduated high school and a friend from there took us to a dim sum place and showed us these!! I fell in love lol and have had dream of these and can’t wait to visit again just to devour these!!!!!

I love those mango pancake I was at yumcha when I’ve first had it, I was planning on going to yumcha with my friends during the school holidays but we couldn’t because of lockdown

I know its kind of common knowledge that "Every" character from DB or DBZ is based on some kind of vegetable or Dish....but I lack the knowledge on how many characters are actual dishes....so....maybe do a series on that? maybe? please? :D

How do you get your pancakes so soft and silky? When I tried to make, the pancake would crack at the sides when folded 😭😭

Mine tasted great but the recipe requires too much oil and the pancake ended up too slippery , making it really hard to roll.

is thickened cream different than heavy/whipping cream? i’ve never seen it in the US.

Emily Hampton, It's whipping cream but with added thickening agent (e.g. gelatin, xanthan gum, etc.). If all you can find is whipping cream, then you can definitely use it; however, you'll definitely want to refrigerate the final product before serving so as to keep the filling more dense.

It is a pretty common pastry trick to throw a little unflavored gelatin into whipped cream to make it more stable. So you could just pick up a box of gelatin packets and make your own pretty simply. This cream didn't look as "stabilized" as some I have seen which uses 1-1.5 tsp per cup of cream so 1/2-3/4 tsp per cup is probably just about right.

Oh god, after years of watching chefs perfectly and easily scrape bowls clean with silicon spatulas, watching you try to scrape that cream out of the bowl with a whisk was painful lol, good thing you cut that shot asap The idea of using a small bowl to prevent egg loss is an interesting one. Because every time you use that small bowl, you lose a small percentage of each egg. So the egg batch size * frequency of bad egg or egg shell has to be > the percent egg loss from small bowl transfer * frequency of total eggs used. Which I'm not sure if that comes out to be true or not, you might actually be losing more total egg mass with that method than you save

The percentage loss would be too tiny to matter. Unless an egg turned out to be a bad one, in which case it would be thrown out and the small bowl rinsed. The albumen (the egg whites) that stuck to the small bowl could be scraped into the mixing bowl at the end. I think Adam meant that if you were to crack eggs straight into the mixing bowl, one rotten egg could spoil the lot.

I grew up in Australia but I have never seen these mango pancakes at yum cha. I left Australia over 10 years ago, so are these mango pancakes a relatively new thing?

I've read peoples comments on blogs/twitter etc. It seems to be more of a Sydney thing originally, in the late 80s/early 90s and spread from there
