I love it when you show the basics because a lot of people don’t know the basics. You know how to open a package or open a can, but they don’t know how to make the basics like gravy.

My Mom learned from her mom...and as the only child but being a boy I had to be the student! But after cooking the flour and butter, margarine fat from the meat you are cooking, I was taught to add the water that you cooked the potatoes in! No sense in wasting the vitamins and starch! Then add milk if making white gravy then the seasoning. By itself for breakfast... Try something new and put a lot of parsley pour over the potatoes and serve with ham, Spam etc.!

Because making a roux, while not "advanced", isn't something that's taught outside of restaurants or culinary schools. A good roux is the base for most sauces which is simply a rendered protein fat and flour of equal parts.

North Carolina here👋🏻 If you get the gravy too thick I add a little coffee. The acid from the coffee breaks down the thickness of the flour without overpowering the taste. You can’t taste the coffee. I always have coffee cooking.

@COMMANDER-ONE Just mix same amount of Water as you do Cream to make the amount of Milk you need for Gravy! If used in Mashed Taters just use the Cream without Water! Just pour straight from the can the amount you need for your taters! It's so good! Good Luck and Enjoy! 🙏❤

I've been cooking for 20+ years, worked as a cook on charter boats and in several restaurants as well as knowing how to bake. Gravy has always been my weakness. I absolutely cannot figure out my mother's milk based country sausage gravy and I've ruined more flour (and sausage grease) than I care to admit. Luckily, Libby's makes a really good canned gravy that comes in soup sized cans or the big 1 gallon cans for food service. I keep a can on hand at all times, it's the closest to what mom used to make. 😢 Mr. Rollins, if you happen to see this, you should try Libby's at least once. You won't be disappointed. It's not "good for a canned shelf-stable product" .... It's just good.

My Maw-maw used to make this back in KY by toasting the flour in the grease to a dark, almost coffee color, really bringing out some flavor complexity in the flour, before adding the canned milk. This gave the gravy a tan color, and a rich taste not present in normal white or sawmill gravy. And over her buttermilk biscuits? Heavenly!

That's a dark roux. It works but it's a different flavor profile than normal milk gravy. Dark rouxes are used in cajun a lot

Gravy is one thing that can be made to be great with enough seasoning, sage, garlic, fennel seeds, etc.. I find the most neglected is enough salt and pepper. A few drops of Tabasco sauce will balance it out the cream.

Or a biscuit, perhaps? 😉 Add a good amount of crumbled cooked sausage and it makes a delectable biscuit topper. But yes, over toast is a classic one, especially if you've mixed in chopped dried beef.

If it's sold in your area, try Half and Half. It's a mixture of whole milk and heavy cream. It is great for gravy. I get it at Walmart, Great Value brand. 👍

First thing I learned to cook, was about 3, my favorite elder put a wooden dining room chair up to the stove, right in front of a cast iron skillet with hot drippings from frying up venison, and taught me by dropping flour by the handful and having me stir it until it was the right color and consistency, then adding milk a splash at a time, all while I stirred, and learned how to season it. I made the gravy from that time on, would drag over the chair myself and learned how to cook everything the old time way long before I could look down at the stove top without a chair or stool. Been making gravy more than half a century now, and still would make a meal out of gravy on a pile of torn bread if biscuits aren't handy.

If you want to keep your flour from being all clumpy, you slowly add cold water to the flour as you stir it in to create a slurry.

Good man! Same applies for sausage gravy! I don't ever measure anything. I just put in as much flour as it takes to soak up the fat. I do it slowly and a spoonful at a time. Same with the milk.

My grandmother always made sawmill gravy. The meat grease (maybe a little butter added in) and flour and brown it real good. Then use water instead of milk

My favorite is some brown onion gravy, especially when we're fixing it with some deer tenderloin or backstrap. We fry up the deer meat then use the leftover cooking oil, mixed with some flour and water, and cook it till it gets a nice brownness to it 😋

I make mine just like this. When I first started making mommas recipes, SOTS AKA chopped dried beef and gravy over toast or biscuits, I would make the gravy either equal parts butter or oil or fat to equal pets flour and milk. But what I don’t know was that this was the actual way to start and make any kind of gravy like from a roe or beef juice left over from a roast or baked chicken. But I’ve never tried it with canned milk. I’m gonna have to try it.

Canned milk is so very good and for its texture too but I only use so much also a portion of whole milk and just some cream all together I also like to make it custard style! Add some sliced mushrooms Also, a little curry powder, a tad white pepper, coarse ground pepper, some garlic parsley salt Military cooks say the flour breaks down when simmered on its own long enough, mainly not sure how that'd work Also, love on mashed! I love that restaurant grade dried mashed!

If you’re using milk, don’t use it straight from the refrigerator. Let it warm up a little bit and you will avoid lumps. Your gravy looks just like my grandfather gravy. He put sugar in everything and never left anything on his plate. Died of a stroke at 72. He did love his gravy.😊
