Thank you for this video. Very helpful. When practicing what you have done I discovered once I’d got the hang of it with the rolling pin I then used a roll of black sack bin liner’s. Just gives a little meat like resistance. T

I have watched a bunch of these videos and could never get the knot right. This was by far the easiest and most informative video I have watched. Actually laughed at myself for not being able to figure this simple knot out before.

Nicely instructed, thanks. Interesting how butchers use slightly different knots but most in the same family of slip-knot hitches. Certainly this method works beautifully. This is a slipped Fig-10, aka Stevedore knot, secured with a standing line half-hitch. Probably the most frequently used version is a slipped Fig-8, aka Evenk/Siberian hitch, secured with the half-hitch. Both give that tightening click, both work great. I've seen other versions, too, but don't care for them as much. I like the click feedback.

if you use a rolled up slightly damp kitchen towel it works almost identical to the feel of actually meat

Its ironic that the Butchers knot is also known as the Doctors knot, since both work with flesh. My mom taught me how to do this while i was helping her suture a patients incision site (bleeding profusely so that only made it more difficult), which is how i learned to do it in cooking. Although i will say that when suturing we often do 2 security knots or even 3 security knots, especially when working with silk over catgut.

Just use a surgical knot. Faster and more secure. By the way surgical knots are sliding knots, when tied correctly.

This is the most clear and descriptive video I've watched on tying a butcher's knot. It gets the camera direction right and shows the perspective of the person tying the knot. You wouldn't believe how hard it is learn from videos that are essentially upside down. Thank you

2:08 is doing this the second time correct? I've been using this video as my sole source of how to tie this knot, but I could never get it to tighten when I pulled on it, it tightened like it was just an overhand knot, making the knot itself tighter. I once accidentally forgot to do this second wrapping of the string and it behaved much more as expected. I've now watched other videos of people tying butchers knots and I see that some of them also don't do this second wrap-around. I'm wondering which way is the right way? Because again, when I do this second wrap-around, the string tightens in the knot instead of around the meat.

perfect, and pardon my intrusion, but as a knot enthuseist, i find that a roll of paper towels serves as a logistical substitute for roasts and compliant bundles without so much blood.

Looks very very similar to the "Pitzen Knot" or otherwise known at the "16/20" knot...used in fishing.... even down to the description of the audible "pop" when it's fully set.

Flamin'eck what a palaver, so many stupid people in this world, all the knot is basically a slip knot pulled tight with another to secure it. I learned this in the scouts amongst a lot of others 55 years ago, you never forget. Perhaps he should describe a Bowline knot in case you laugh so much at this you faint while doing extreme cooking halfway up a cliff. 😂

40 years in the butcher business. That is the most complicated lesson I've ever seen. I've tied over 100,0000 roasts in my time and can teach a butchers knot in 30 seconds or less

Your butcher's knot video demo was spot on: Clear, concise, well annunciated with brogue that's easy to understand. To practice string tying, using a rolling pin held by blue tack - very novel. Your overhead camera view was steady & professional TUB 'C'.

Worked perfectly. I had a rolled pork leg that was the wrong shape to fit in the air fryer. Kept touching the bottom and wouldnt turn on the rotisserie.

I can tie this knot in like 3 seconds with my knife in-hand, lol. Love teaching this to new cutters. It's really quite tricky to master. What is really important on this knot is tightening the knot first on the upwards direction , so when you pull downwards, you will hear the twine make a snap which is the friction of the twine on itself. The string should almost be hidden by the roast from it slightly cutting its way into the roast. For people wondering WHY you would tie a roast: You would want to tie a roast primarily after it's been deboned. After deboning the meat opens up to a larger surface area and harder to place in a tray, rack, grill, etc. Tie it back up to mostly it's original shape before deboning and it looks better and is easier to handle pre and post cooking. If your butcher is really good, they will space the string out so you can carve off perfect slices between each string

Thank you for your comment. This particular video is not directed solely at Butchers, but to anyone who would like to learn a Butchers knot. As a" journey man " I am sure you would understand not everyone has the skill or confidence to use a knife to cut string. Taking this into consideration, whilst making the video I decided, from the point of view of health and safety, and a strong sense of responsibility towards the people learning from the channel that scissors where the appropriate tool to use. I hope this clarifies my justification, and helps you to get over your(in my opinion) unfounded embarrassment. Kindest regards Franco
