May be ther is heat escaping from the oven door....if it's excessively Hot to touch please consult professional appliance repair service.

You can use the 200 and reduce time though your cake will be a little harder, cryspy like...or bake with the 150 and increase time..

You can use any,, provided they can withstand high temperatures and they are oven safe...
