A friend poked a hole into eggs before boiling, and now I know why. Your videos are highly entertaining, and your accent and grammar are fun to listen to. I can listen to perfect English all the time, but that’s boring.

Always poke one hole into the eggs, usually works well, sometimes not, egg white leaks out and/or not easy to peal some egg white sticks to the shell... but no problem as it only occurs rarely/randomly, I always add a good pinch of Natron/Baking Soda (NaHCO₃) to the water..

try to add good amount of salt instead, it will help white egg seperate from shell easier because of few factors. Also add litle bit Vinegar - it will block egg escaping shell. Pros ) use it to block egg escaping cracked shells. And it does not inmapct taste of egg, it will not be more salty etc.

What about steaming eggs above water with a hole or two? I’m curious about above and under water and how they both differ.

Didn't do it. Also I do not steam at all, so I do not even have gear to try ) But maybe I will do one experiment later

You have to poke it on the wide part (it’s where the air pocket is) of the egg and have that hole facing up when boiling

Try steaming the egg with the blunt end up for easiest peeling. Hole optional.

How much time have you boiled them?

6-7 minutes for runny yolk, 8-9 minutes for soft yolk, and about 11 max 12 for hard boiled. Give them an ice water soak immediately after to stop them for cooking.

How would it effect the shelf life. I boil on Sunday and eat them all week. Would they get yucky tasting I wonder

3 days max, I personally would not keep such eggs at all and eat them same day. If you keep them for whole week - don't make a holes ) Bacterias will visit your eggs through that hole.

The water doesnt only prevent the egg from sticking to the shell. When the egg is heated, the eggwhite will expand and pressure inside the egg will go up. This may cause the shell to crack. By making a hole in the shell, which is done at the side where the air chamber is, the air can escape and thus the pressure unside the egg remains equal and the chance of it cracking is much lower. To make the peeling easier, make sure to 'shock' the eggs right after boiling by putting them in some cold water for a few seconds.
