Chef Tony after drying in paper did you fry the artichokes with pepper in oil. The video seems to have skipped a stage??

It is possible that that part is like "Secret Family Mix" and thus he wanted to keep it out. But it looks like he added whole peppercorns and basil with olive oil, maybe Pepperoncino and other spices. He mentions about boiling the jar, so that likely is jar heating / pasteurizing to enable for sterilization. For this part, I highly recommend looking up another video on it.

So, after cutting them you soak them in water with a lemon slice? And how long will it take to have pickled artichoke to eat?

He doesn't talk about time after the soaking because it highly depends on the number of artichokes you have which will determine how long you have to boil / cool / dry them all. This isn't a set recipe with limitations of size and quanity of artichokes but for General Cooks who could manage making this regardless of quantity, i.e. for Large Families.
