My mother had a friend to call and ask her how to pickle okra. She's been known for canning but its been a long time - she has forgotten exactly how to can okra. Well, well. Look who I ran across to share the recipe. My mother can now relive her pickled okra and canning experience and share with her friend. Thanks Old Man Cooking for sharing.

I've never really ever eaten Okra, but bought a jar of Tobasco Pickled Okra recently and scoffed the lot in three days (and I was holding back!). We don't see much of it in Australia, but I now have seeds and some that I bought at the Fruit and Veg shop to get me by. Pickled Okra is going to be a regular item on my table from now on. I need to dig the preserving unit out from under the house. I haven't used it since the late wife passed in 2007. Thanks for the recipe, I'll be using red chillies, they look better in the jar, haha!

An easy way to sterilize jars is to wash and rinse well then put in a preheated oven at 220 degrees for 20 minutes. That’s all it takes to sterilize plus hold them at temp without taking more stove top space. Thanks for the recipe!! I’ll try it

Love your southern style of communicating! I'm a raised Mississippian living in Argentina, and I just found okra after being deprived for some years! (You can imagine the joy!) I wanted to ask you, I cannot find mason or ball jars here or something similar with an airtight seal. They are old school here, using a big canning machine for which I have no space or money for. Can I re-use jars with lids that are screw-on and not airtight? Maybe it would only last a few months in my fridge? I figure since it is pickling with vinegar that I could keep it in the fridge for some months. What's your opinion?
@OldManCookin
@OldManCookin 8 жыл бұрын
+Amy S I truly don't know the answer for sure.... But I do know you would not be able to water bath them to make them safe... Can you order from Amazon in Argentina? You could use a Fido jar and lacto ferment your okra... real good for you too... I haven't lacto fermented any okra yet but come summer I will be.... check it out on Fermenters Kitchen on Facebook... you can get just about any question about fermentation there and you can keep it in fridge after fermenting... to do this you will need jars too but Fido jars work great for that... maybe you can find them there.... :)
