Love pickled onions! Two tips I learned with pickled onions: (1) If you slice them from root to tip instead of across, they keep their structure and texture a bit better. (2) If you bring the liquid to a boil (or near it) before pouring it over the onion, they will "pickle" much quicker.

Thank you for sharing your technique and recipe. It is very timely for me as I plan to make beef tacos this upcoming weekend. Normally, I chop up a red onion and add to my meat mixture as it cooks. However, you have given me the idea to use your pickled onions as a topper on my planned tacos. I think using the pickled onions in this way will really give a burst of flavor and texture to my upcoming tacos.

I do the same thing with Cabbage ... So easy to do that there is no excuse to not always have pickled onions and pickled slaw on hand at all times.

If you don't want to cry, cut your onions this way. First cut the onion tops and bottoms off. Then Cut your onion from top to bottom in half. Lay the flat side on the board. Cut your slices from the top to bottom and it will not release the compounds which make you cry. You onions will also not be as bitter. Thank you for the recipe!

Radishes are not as strong as onions so the brine may overpower them a bit. That said, let us know if you try it!

Cutting the onion from root to stem, instead of across, will work better because you're not breaking as many cells in the onions that release the stuff that hurts your eyes.

I didn't know Nelson is from El Salvador. I've been there, in 1992 I participated in an aid caravan after the cease-fire was declared. Nelson was probably a young boy then.
