Soil mix:
1 part peat moss
1 part compost
1/4 part perlite
1/8 vermiculite
1/4 tsp garden lime per gallon of soil

Do you recommend going with a similar size pot like the one you're using? Is there a minimum size you would use?

Those 10-gallon fabric ones are perfect for just about anywhere including your climate. I'd recommend that and fill up to about 8 gallons of soil. You might be able to get away with 5 -gallon buckets, but you would have to water more often. I used to use the self-watering ones, so there are those if you go with 5 gallons.
