The lobster was probably steamed, not boiled, hence no juice. I prefer boiled. There’s also meat in the lobster knuckles that he didn’t even bother to mention. There’s also some good meat in the body where the little legs meet the carapace. You need to use your hands to get at it. Lobster dipped in drawn butter is my favorite way to eat it.

After going on about how important it is to save the juice, that lobster wasn’t really giving off any juice. No advice about removing gills (which aren’t really that good to eat!) and doesn’t tell you how the get meat out of the legs or claw joints. I used to prep lobster with a knife, much in the manner of this video, until I recently discovered a video that shows how much easier it is with nothing more than a rolling pin and a good pair of scissors.

This is prep for serving to customers in (I assume) a nice restaurant, so it’s been left to allow the customer to finish the job themselves with initial prep done - e.g. cracking it and removing inedible parts. Most restaurants won’t serve a lobster with all the meat extracted as they will assume the customer knows what they’re doing, and things like the claws will give off a lot of juice when the customer breaks into them, so the tray idea will be a bit less messy at the table. If you were eating it at home or in a less formal restaurant you probably wouldn’t receive the lobster cut in half like that, you’d just snap all the bits off yourself. I guess some posh restaurants want to ensure a balance of presentation and practicality for their customers.

So I didn't know about the intestine section on the tail. Not until a friend told me about it for SHRIMP. I was always taught to prepare it the same way otherwise (remove stomach, cut it in half, etc) It's never been a problem to eat, for shrimp or lobster, but now I'll have to remember. But question: is it the end of the world not to remove the intestines?

Simple. You can only remove them from a crab, not a lobster, because crabs have them and lobsters don't. And they're not necessarily poisonous. They're the gills so have been filtering whatever the crab has been swimming in - if that was unpolluted sea then there's nothing poisonous about the gills, but you still wouldn't want to eat them as they're not at all nice.
