In Scandinavia we never allow the dough to touch the basket, we cover with linen cloth (which you can buy ready made if you want) and then use flour to cover that. So you can if needed, if something ever goes wrong (it will go to h***l a couple of times over the years) you just trow it in the washer machine and drier and your'e good to go, without touching your clean basket with so much as a dust whip.

As moat Of these are manufactured in Pakistan or India. Genuine, wash the baskets and the cover. Since the conditions are kind of different over there, then here they can be contaminated with some things

Nice, thank you! I heard don't use wheat because gluten blah blah blah... I wound up using rye flour and a little cornstarch. Good to see it CAN be done with regular wheat flour.

Yes it can definitely be done with wheat flour. You might need to use a bit more and clean out your basket more often, but that definitely beats having to buy specialty flour 😂

Anything CAN be done, that doesn't necessarily mean it should be. But use what you want and what works for you. I use straight up rice flour because I need to be gluten free and rice flour not only works to keep me safe from gluten, but works like a charm as well.

Good video and love the finished loaf 👌 After conditioning the Banneton with water and flour and allowing to dry does the Banneton get mould over time? Often see bakery videos using proofing baskets with what looks like black mould.

Hi, thanks for watching ! ❤️ No, the banneton won’t grow mold as long as you let it dry completely before storing, and if you store it in a cool, dry place. Bannetons only get moldy if you store them in a humid or enclosed place/store them while they’re still damp.

No. I dust with white rice flour each time I use it. No sticking and no potential for bacteria growth.
