Materials: eggs,steamed rice(it will be better to put in a big container for 2-5 hours let steamed rice into dry),diced carrot ,diced onion, chopped green onion. (generally it's also put with some diced cucumber,diced tomato,diced green pepper,mung bean,shrimp meat or diced sausage or other diced meat) And,you don't need separate the eggs into too small pieces. Then Olive oil is the best choice than other oil,but others is still ok,also if you don't like MSG, salt and soy sauce is enough. (both dark soy sauce and light say sauce is ok,light one for sushi salad and dumpling,dark one is more strong,use for general cooking,mushroom soy sauce is one the most common and good one) Finally,don't forget to add white or black pepper powder before you finish cooking,it tasty better. By the way,it's the most ordinary staple food in China, both for breakfast and dinner,(how about for lunch? aha,we have super lunch instead of it).But it's still one of the best popular food for lazy indoors man.you can find this food in almost every small road restaurant in whole china,but the best tasty one in Yangzhou ,a city close to Shanghai.(Yangzhou fried rice,it use much more ingredients than general one,use less salt less soy sauce but taste a little sweet),if you have opportunity to go to china,never miss it!

this is actually teppanyaki though, it's more japanese style than chinese. Chinese chefs usually use woks over a stovetop with a roaring flame
@dogeofchristmaspast39326 жыл бұрын
I'm American and I learned to cook like an asain using woks and the different spices, oil, using the wok technique flipping food in the air and all that great stuff. Its simple stuff really but its apart of their heritage so that's why they take so much pride in it. It's something to learn these kind of skills acquired from this culture, I mean I'm a white boy and I always loved the Chinese culture since I was young, but man It kind of makes you discouraged when you try to embrace another kind of style and there's others who put you down.

There's many variations of Fried Rice but this one is mine. 1. Use old rice. It has to be slightly dry before you cook it or you'll get a mushier texture. 2. Soy Sauce and/or Oyster Sauce 3. Chopped and seared Chinese Sausage (Lap Cheong) 4. Chopped Green onions 5. Under cooked scrambled eggs 6 White Pepper 7. Frozen Peas 8. Add water as needed and stir fry with an oily searing wok 9. Stir fry constantly for 5-6 minutes

Salt is used in Chinese cooking. Soy sauce isn't used on everything. Some dishes don't need that particular flavor.
@reneebegley82667 жыл бұрын
Salt is used in most types of cooking but some cultures over do it. People in the US have been eating too much so they can't have all of this or even soy sauce. The lady that showed me how to make it was Chinese and she used Oyster sauce and not soy in the mixture. They may have used some to taste after cooking by individuals. I like her way. The fried rice tastes better.

Great setup. You can see that the hottest part of the grill is the center. Eggs fried, chop chop put aside, onion and carrot saute, rice on eggs add a sprinkle of water to soften, mix all well, add salt and pepper, keep stirring, add green onions, sesame oil and soy, final stir and ready! For those that think it's too much salt, this is for 2-4 people and he put only a little soy sauce. Fast and efficient, Chinese style. Add chopped ham or shrimp and it's gold!

Cook it all the time at home and we're obsessed with it. Very easy, quick and perfect side to just about anything or as a meal itself (eggs are your protein)...

@angellira675210 жыл бұрын
The name Teppanyaki is Japanese for the style of cooking. Teppanyaki literally means iron plate cooking. The concept of fried rice made this way is from chinese cooking. It was made popular in the US by chinese and japanese steak house restaurants in a attempt to get people to pay a good chunk of cash for the entertainment of food being prepared in front of them. These styles of restaurants later became popular in Japan because they were popular in America. Its pretty hilarious when you think about it haha!

Wow, sure wasn't shy about cooking the ever-living-fuck out of those eggs, was he. Re: salt- When you're not eating crap made in a factory, food needs seasoning. That was probably a teaspoon and a half of salt for two portions of rice. Round up to 1800mg of sodium in one serving of rice, and we'll bump that up to 2300 with the soy sauce. This is more than it looks like he put in, but the other ingredients have naturally occurring sodium so we'll keep the high number. A sandwich with two slices of white bread (375mg), two slices of land-o-lakes american cheese (786mg), three slices of ham (782), and 2 tsp mustard (114mg) comes in at over 2000mg sodium. 3 pizza slices from a papa john's extra large pepperoni will run you 2640mg. Subway's footlong italian has almost 3,000mg. A sunrise fiesta breakfast burrito at the Cheesecake Factory is 4,060mg An order of Wok Charred Beef from P.F. Chang's weighs in at 10,045 milligrams sodium

Too much moisture in rice. Make it with less water. Also, refrigerate the rice overnight. That helps dry it out.

To everyone saying he used too much salt, that was actually garlic powder; and yes you want as much as he used.

China doesn't use garlic powder. But this video isn't Chinese.
@BobRooney29010 жыл бұрын
thats a dangerous amount of salt or msg. the egg shredding technique is nice, but hardly anyone at home has that type of grill to play with. i just use a wooden spatula to break mine up.
@foxsux600010 жыл бұрын
About 50% of the salt you use while cooking doesn't stay in the food, added too much salt to your cooking? (add water and let it evaporate till it's gone, oh science.)
@stluke32410 жыл бұрын
Mark R. lol..the salt doesnt evaporate but stays in the food. Its the water that does (at and above 100 deg celsius). Try heating only salt and water at home till all the water evaporates notice what remains. Its the same principle employed in distillation, Mark. I have never heard of NaCl vapor.

Ever since I was about five years old I have loved Chinese food. There are many great cuisines in this world but I think the Chinese make food more fun than anyone. They have had 7,000 years to get the recipe right, I suppose...
@OTTO149x2 жыл бұрын
I have to agree with you there. We have outstanding authentic Chinese food in Vancouver and I've enjoyed it since I was six. Italians are good and the French are good but I think Chinese food is indeed the most "fun"...

Did you notice how many large eggs the guy used and how finely he chopped them up? That was four large eggs in one plate of fried rice. Come to think of it, the fried rice in Chinatown always has that bright yellow tinge to it. Great video!
