This is THE omelette tutorial I've been looking for. Just made one using this method and it was *chef's kiss*. I usually turn that heat up and smash it out. But only patient, gently teased eggs for me from now on. Didn't have chives but added a few chilli flakes 😋

Exactly! I do like a solid omelette, I usually finely grate in Gruyere cheese into the raw eggs with a good dash of black truffle oil, then season with salt and pepper and cook. I find mixing the Gruyere cheese in with the truffle oil before cooking the omelette stops the cheese from sticking to my uncoated/seasoned stainless steel pan. Love the vids helping me be a better cook.

Heat peanut oil until it starts to lightly smoke, about 450`F then let it cool. That will make your pan non stick.

That is exactly how I cook an omelette in principle. Slightly under cooked but by the time you have folded, put on a warm plate and sat down to eat it has firmed up with residual heat and is absolutely perfect in texture 👌

without a doubt, the king and emperor of cooking. i grew up watching him and mastered his techniques. it's all about technique, especially on the many ways to cook and omelette. american style, french style, country style. it doesnt matter. it's all good. my fav is french style with shredded white cheddar and jalapeno pepper slices in it with some fresh chopped cilantro and chives on top.

The final component of a brilliant , not flat-like omelette (as per your pictures) is to stick it under the grill before the final fold in half. Place very close to grill and see what happens. The egg mixture rises - turns out lovely and airy.... all other omelettes are like those younger in an airline for mass produced breakfast.

I usually add a 1/4 cup of half and half or third of a cup of coffeemate original creamer right in the mixing. As its cooking on low I go around and push the cooked in and let the softer drift to the edges. Once it's flipped and smooth, I add the cheese and sausage depending on what the diner wants. Flip it, season it and serve it. Works nice. Some restaurants let it go too long and it becomes browner and harder.

I season the mix before in goes in the saute pan and when getting ready to flip I can tell if it needs a pinch more. When you flip you want the seam side down. It's all about practice and timing. Remember when you're plating that the eggs are still cooking. You want a moist consistency. By the time it is served with the other breakfast items, it will be perfect.

I have never been happy w/my scrambled eggs much less any attempt I made at omelettes, but I see from watching this video that I’ve been rushing the cooking & need to slow down some. I don’t like any moistness in my eggs so I’ve been trying to flip them before they’re done so they can cook on both side & then fold them. I’ll just take my time & see if they’ll cook all the way thru from one side. Thanks!

Agree- the last minute or so in the oven seems to work wonders for the texture. I shuffle the egg mixture about 30secs or so after putting it in the pan and it gives the omelette a nice rippled effect on the underside. Have you seen a Japanese omelette cooked using chopsticks?

Nice. Personally I don’t disturb the egg mix in the pan. What’s the point? Let it cook and start to set. Add your grated cheese of choice and I’m a fan of mushroom in my omelettes. When your happy with the melt on the cheese fold straight off the pan onto a warm plate. Superb.

I am by no means a cook of any sort. I have recently begun to cook more often out of necessity alone. I've learned that many foods are best cooked slowly. I used to cook eggs like I was racing the clock. But now, i get that 5 or 5 1/2 minute target on just between medium and medium high in a oneida thick bottomed small pan. i use about the same amount of butter, and i flip my omelette. i will try cooking it longer on the first side and not flipping it to see what happens, but i was surprised that my general method here was so similar to yours!

I separate the whites and yolk whip the whites then fold in .cook in the pan add the cheese etc then to cook the top put it under the grill.light and fluffy

Nice classic french omelet! At the hotel restaurant where i work i add all the toppings in the pan, then the egg. Fold it in a half moon shape and add cheese if you like.

Chef Since you have seen the Bear , could you elaborate more on the 2nd episode's scene , in the 1st season ? Trying to be viral and advertising yourself through media is applauded , you do it with class and uniqueness . The darker schemes of the industry have to be brought to the fore though , not just a french omelette .

@fallowlondon can’t beat a nice quick tasty omelette, I love to add some gently fried mushrooms spring onion or chives with thyme and oregano, (and a generous savoury sprinkling of flavoursome med/strong grated cheddar or your favourite cheese) into the middle before folding the omelette over to melt the cheese into a gooey mess prior to serving, absolutely divine and very simple comfort food, served with some lovely soft fresh buttered bread to mop up the delicious savoury decadent juices, topped off with a drizzle of creamy fresh mayo and cracked black pepper to complete the flavour combination and dressing of the dish 😉😋 nom nom, there’s something really magical about the mushroom and oregano especially that works with the egg 😎

4 Eggs plus one Yolk, scramble. Butter in pan, medium low heat. Must cook off water from butter but don't brown. Eggs in. As soon as a good skin forms on bottom, into the broiler on low. 30sec to 1min remove. Add happy stuff and fold, and plate. You are welcome.
