Wouldnt call myself a chef but ive cooked for 20 years. From fast food to decent restaurants and i will say, understanding the texture of food your working with and the materials you have says alot. and every cook is going to have there preferences. Exactly! I do like a solid omelette, I usually finely grate in Gruyere cheese into the raw eggs with a good dash of black truffle oil, then season with salt and pepper and cook. I find mixing the Gruyere cheese in with the truffle oil before cooking the omelette stops the cheese from sticking to my uncoated/seasoned stainless steel pan. Love the vids helping me be a better cook.

Heat peanut oil until it starts to lightly smoke, about 450`F then let it cool. That will make your pan non stick.

This is THE omelette tutorial I've been looking for. Just made one using this method and it was *chef's kiss*. I usually turn that heat up and smash it out. But only patient, gently teased eggs for me from now on. Didn't have chives but added a few chilli flakes 😋

That is exactly how I cook an omelette in principle. Slightly under cooked but by the time you have folded, put on a warm plate and sat down to eat it has firmed up with residual heat and is absolutely perfect in texture 👌

without a doubt, the king and emperor of cooking. i grew up watching him and mastered his techniques. it's all about technique, especially on the many ways to cook and omelette. american style, french style, country style. it doesnt matter. it's all good. my fav is french style with shredded white cheddar and jalapeno pepper slices in it with some fresh chopped cilantro and chives on top.

Jacques is the GOAT. In his day, he actually made the whole meal start to finish in show's run time. He would start running out time before the end and whip up some impromptu dessert out of nowhere. And his meals were affordable and anyone could do it.

Jacques Pépin does the best omelettes I've ever seen. They are smooth as silk. His whole technique is flawless.

And he cooks them in less than a minute. Same with Julia Child. Her omelets where on the plate 30 to 40 seconds after the eggs went into the pan. The omelets in this video seem to take way longer than necessary with no apparent benefit. Seems more like a non-browned fried egg that was folded.

That is literally what a weekend omelette lookes like in my home. Served one to my youngest once, been asking for an omelette breakfast on weekends ever since. Delicious with a toast, coffee and a glass of juice/smoothie.

Its garbage too. Lose the butter and add more spice. Make a sandwich out of it with ham tomatoe salad etc. Folding it has no use, so dont bother

Instead of butter I would use ghee, since ghee doesn't burn. Or I would start with a layer of heavy cream covering the bottom of the pan, heat it slowly while stirring, and then slowly add the egg into the cream. Then continue making the omelette. YUMMY!

I suppose everyone has a different opinion and preference for omelettes! This looked great, I prefer to fry mine in hot olive oil and it comes out like a wafer thin, bubbly pancake - cooked through! 😊

@fallowlondon can’t beat a nice quick tasty omelette, I love to add some gently fried mushrooms spring onion or chives with thyme and oregano, (and a generous savoury sprinkling of flavoursome med/strong grated cheddar or your favourite cheese) into the middle before folding the omelette over to melt the cheese into a gooey mess prior to serving, absolutely divine and very simple comfort food, served with some lovely soft fresh buttered bread to mop up the delicious savoury decadent juices, topped off with a drizzle of creamy fresh mayo and cracked black pepper to complete the flavour combination and dressing of the dish 😉😋 nom nom, there’s something really magical about the mushroom and oregano especially that works with the egg 😎

I usually add a 1/4 cup of half and half or third of a cup of coffeemate original creamer right in the mixing. As its cooking on low I go around and push the cooked in and let the softer drift to the edges. Once it's flipped and smooth, I add the cheese and sausage depending on what the diner wants. Flip it, season it and serve it. Works nice. Some restaurants let it go too long and it becomes browner and harder.

Nice classic french omelet! At the hotel restaurant where i work i add all the toppings in the pan, then the egg. Fold it in a half moon shape and add cheese if you like.

The final component of a brilliant , not flat-like omelette (as per your pictures) is to stick it under the grill before the final fold in half. Place very close to grill and see what happens. The egg mixture rises - turns out lovely and airy.... all other omelettes are like those younger in an airline for mass produced breakfast.

Personally I like to whip the eggs with salt until a little fluffy.....Then follow your steps but leave it "slightly undercooked"....& it just melts in your mouth...... YUM !

To chef to chef, an omelette is a personal preference. People have their own ways and taste. But I do think in a lot of restaurants, cafes etc where they serve omelettes you would do it a bit faster with a higher flame. Create those curds as you have done. Not much browning to the eggs. Plenty of butter.. that omelette isn’t bad and I’ll properly hire you from trial shift but presentation looks like just a folded egg like what you get from McDonald’s. I do mine with more of a roundness to it. And slightly curves around the inside of the plate. Also putting salt before is fine Aslong you don’t keep it sat there for ages. Cook it straight after

Agree with you, with very low heat omelette will remain flat.. With the right pan and the right temperature you can finish an omelette in 30seconds.

Personally, I really don’t give sh*t about presentation. As long as my omelette isn’t super runny or burnt, and it’s buttery, I’m destroying that sh*t in 5 minutes.

If you are going to eat a "plain" omelet just scramble 'em.. Omelets need "stuff' inside like mushrooms, jalapenos, onions, spinach, cheese and bacon

I season the mix before in goes in the saute pan and when getting ready to flip I can tell if it needs a pinch more. When you flip you want the seam side down. It's all about practice and timing. Remember when you're plating that the eggs are still cooking. You want a moist consistency. By the time it is served with the other breakfast items, it will be perfect.

I don't move my eggs once I pour them in I start it slow on stovetop once the bottom looks solid I add my ingredients and finish it in a 200 degree oven comes out Perfect every time!😊🙏🏾🙌🏾😇💝 however, Thanku for Sharing your wonderful ideas and recipe🥰👌🏾👍🏾😁

Agree- the last minute or so in the oven seems to work wonders for the texture. I shuffle the egg mixture about 30secs or so after putting it in the pan and it gives the omelette a nice rippled effect on the underside. Have you seen a Japanese omelette cooked using chopsticks?

You, I made an omelet this morning (no garnish nor cheese filling). I added some milk to the egg mixture and only pepper and turned it to a style that combines both the french omelet and country omelet.

HAHA, I was just thinking the same thing. While I am sure it tastes great (it better with that much butter), that is DEFINITLEY not something you want to eat more than once a while if you value healthy eating.

I have never been happy w/my scrambled eggs much less any attempt I made at omelettes, but I see from watching this video that I’ve been rushing the cooking & need to slow down some. I don’t like any moistness in my eggs so I’ve been trying to flip them before they’re done so they can cook on both side & then fold them. I’ll just take my time & see if they’ll cook all the way thru from one side. Thanks!
