perfect explanation. The only thing I noticed is that when you shake it , it shuold be upside down, to remove more powder. Gravity reasons.😊Its better to use a metal kettle on the furnace rather than an electric. All objects wich contain plastic don't tend to taste good. Its good to add lemon although orange is more common. Some people add clove too. But you seem to dominate the issue. Good luck!

Excellent! This is how we prepare mate in Uruguay (and probably in Brazil too). In Argentina they usually don't make any slope neither they put any cold water at the begging.

If you have chance try the yerba mate from Paraguay (ilex- paraguaiensis). Instead of putting hot water, try to put very chilled water. During the summer is awesome.

Where has been the most exceptional place you have tried mate? Has it been in the smaller areas where meta mate is sourced? +Tiff c. A small town in Southern Brazil called Ilópolis was the most memorable mate destination for me so far. Out of 200 farmers, only 4 do not grow yerba mate. here's the entry on my travel blog (www.travelpod.com/travel-blog-entries/jovi/3/1404164019/tpod.html). Thanks for sharing the link to your blog. It was an inspirational read, and I am eager to try that chai mate recipe on there. Have you heard the term, "cebador"? Well, it's the title given to the person who invites a few friends, prepares the water and the mate, serves it and keeps filling it up as it goes around the circle ("ronda"). For a lady, it is, "cebadora". The mate, "ronda" is part of daily life in the Southern cone countries. Viva la ronda ;)

Extremely impressed with how devoted they are to the practice, and especially with allowing the plants to regenerate themselves through time. It is truly harmonic, once you've tried good mate, it is hard to go back! Do children drink mate often in small towns like Ilopolis? In the Americas, we are afraid of giving children too much caffeine. Of course there is an abundance of us who start our day off with coffee caffeine, so that may be it. Thank you for checking out the blog, and not upset with my bastardizing the mate itself =) Mate chai is a sort of bitter flavor it ends up being since it's heavy on the ginger and pepper, i've taken a liking but many of my friends have not. Oh yeah kids drink mate (kzbin.info/www/bejne/Y6Wme3p7qNJjn68), but they spend more of their time playing and having fun than drinking mate. Mate culture is incorporated into children's programmes in Argentina too. When a child becomes of age they will receive (or inherit) a mate kit: bomba and gourd, which they drink mate from for the rest of their lives. This is important for the continuation of the culture. Most kids start drinking mate regularly in high school because it is naturally a stimulant of social exchange which teenagers adopt instinctively. It's lie an open channel of communication. Mate is a blessing because it is one of few healthy habits that teenagers become inclined to adopt at a time in their lives when they are highly influenceable.

Great informative video on mate preparation. I tried this traditional method for the first time. The tea was really strong at first. It became more drinkable later after some dilution. I found that after adding any water I was unable to maintain any slope of the mate in the cup. The tea was all mixed into the water. No problem though - I just sipped it through the bombilla. I understand that traditionally the mate is meant to be shared. How common is that?

David Kurtz thanks for the feedback señor matero (mate drinker). The trouble you're having with the slope is either that you are using too little yerba (gourd should be at least half full), or that you are pouring the water all over the yerba from the start (you should pour into the 'bottom'-of-slope side). As you say, there's nothing wrong with brewing it all in one go, the slope technique is for when you are sharing with many and have to prolong the "brew-ability" of the mate for as long as possible. Sharing mate is very common in South America. Generally, mate is not shared with strangers, just with friends, colleagues and family that happen to be around when a mate is prepared. I encourage sharing mate, because it is a catalyst for conversation and exchange, and it promotes the inherent value of, "sharing health"

yerba mate contains a significant amount of caffeine so please consult a medical professional about health related questions. As for sugar, you can add sugar to your hot water flask. Alternatively, you can sprinkle some over the yerba in your cup.

Thank you. Yes, that's much too long. You should drink it immediately after adding the water. Another tip is to add only little bits of water at a time. 50ml at a time is plenty.

Hi Swati. Good question, thanks. The culture of mate goes something like this: once it"s stoked, drink it constantly (refill after refill) until it has no more flavour to give, and then we dispose of the yerba, rinse the gourd and leave it to dry for another day. Generally, a mate it not left overnight. In fact, it's usually not left idle at all. I suppose the reason is that it just doesn't taste good anymore if we try to rekindle it. Perhaps with terere (ice mate) it won't be so bad to leave it for a while.

Here in Brazil, we call the Yerba Mate like Chimarrão. It's very common in the State of Rio Grande do Sul. It is a little bit different from the Argentina's Yerba Mate. The argentine has a stronger flavor.

How many times can you brew from 1 cup which holds 300ml total? It's 50% tea so 150g mate, right? Also, do you leave it like that in the cup? How does the top dry mate also become infused with water, does it automatically after 3-4 brews of the same cup or is the top mate dry and wasted?

Hi TB. Since yerba mate is much less compact than liquid it fills more volume. In other words, if you fill a 300ml volume cup with yerba mate you'll probably only get 100g in there (max). Therefore, I'd estimate that filling your 300ml cup halfway with yerba mate would weigh in at about 50g. Now to answer your question, the normal way of drinking mate is not to put it aside and leave it for later. One usually drinks mate continuously until the herb has lost its flavour (until its gone flat). After that you dispose of the yerba, rinse the cup and gourd and place it somewhere to dry: ready for using next time.

Technically speaking you should not drink any liquids above 65 deg C. You don't need to let the mate steep because it gives off flavour immediately and more importantly to make the other people not have to wait long before getting their turn.

Maybe at first if you didn't were careful when putting the bombilla, it's normal for the first and second to contain some of the yerba dust and even a little bit of the smaller leaves.

what if you are only preparing for one person? won't this waste a lot of mate? can I keep the remainder overnight? Currently I just put a bit more than a tablespoon in my gourd because its just me.

Charles Duffy you can make it the same for yourself and just pour and drink until the flavor is gone. You can easily end up drinking 750 ml of water if you want to. For me it’s the ideal drink to keep you company while doing something else like work or study, you pour one every once in a while (just don’t let it cool down)

Usually some bits of yerba will come through. Generally in the first and second servings. Extra protein man ;) Make sure not to stir the mate or move the bomba otherwise you will make it worse.

You killed your 'chimarrão" when you put lemon, sugar and other junk, just put 1 to 3 leaves of lemon grass depending on the size of the "cúia". For the ones that getting "bomba" clogged has some types of disposable tissue condoms to prevent this from happening

Pedro, he's preparing mate, not chimarrão. I've taken quite some time to get that. People in farthest south in Brazil are the only ones that drink the original chimarrão (mate prepared on almost boiled water, on a special cuia, with nothing else in it). And Gaúchos are quite bold in saying that chimarrão is a tradition of the pampas, everyone else drinks mate, not chimarrão. And, correcting a little of your advice, if your bomba or bombilla is getting clogged, you must learn to position the yerba better. Those bombilla "condoms" are a waste of time, it will clog anyway
