I use bicarbonate to maintain the green color too. I have a huge bag of this limestone somewhere in my freezer way back from 2013 when we could still visit home freely😫. To achieve the lumps I cook my egussi in the microwave for 18 minutes in 6 minutes intervals. You get perfect lumps easily. I'll share my bitter leaf soup and egussi recipe. Back home mom taught us your method of doing the lumps sis. The results of this soup is amazing!!! Chia my and vegetables I could eat all that pot🤤🤤. I love eating mine with half ripe or green planti sis. Thanks for sharing 😍😍

600 gm of egusi, from the African store. You must hv spent a good sum there. This is how we cook our egusi soup. The difference is what oil you use. This reminds me on ndole. Looks yummy 😋. I like mine with fairly ripe plantains

Hi @Patrick these are not spinach leaves, it’s okongobong leaves. I bought them from an Asian store. It’s usually displayed on the outside tables or you can ask them for “ugu leaves” (that’s the Nigerian name for it)

That’s the best thing to do if you end up with burnt egussi though the burnt smell will still be there.

Hi Ekupe, you can dissolve limestone in water and add the liquid to boiling water or alternatively, just add a little bit of bicarbonate of soda to your boiling water then add your dried okongobong to it. Let it boil for about 5-7 minutes then squeeze. The rest of the cooking process is the same after your dried okongobong has been steamed and squeezed. Hope this helps. Thank you.

So delicious but you should have just boiled the lumps instead of frying. That's how we roll here.

Thank you 🙏🏼 though after this video i learned a better way of making the lumps in the microwave. You just mix the egussi with a little bit of water and pop it in the microwave for about 2 minutes max and it hardens then you cut it into the size of lumps that you want.

Normally when u cook egussiwith little water, it forms lumps. U didn't need to fry like u did

Thank you. I learned that after I made the video. Also when you mix the egusi with little water and put in the microwave for a minute it becomes hard then you can cut the lumps to your desired sizes.
